Are they muffins or biscuits?? Only 5 ingredients, one bowl and a muffin pan. What could be easier? These muffins taste exactly like heavenly, light, baking powder biscuits. They are sinfully rich and oh, so delicious! So much easier than messing up your kitchen with rolling pins and flour allover the counter. Tip: These brown better without using paper liners.

2 1/2 cups all-purpose flour
3 tablespoons sugar
1 1/2 tablespoons baking powder
3/4 cup cold butter or 3/4 cup margarine
1 cup cold milk

Steps:

  • Preheat oven to 400 degrees.
  • Grease one 12-cup muffin pan (2&1/2-inch size).
  • In large bowl combine flour, sugar and baking powder.
  • Cut butter into thin slices and add to dry mixture.
  • Using a pastry cutter or low speed of your mixer, combine the butter with the dry mixture until it resembles coarse crumbs.
  • Stir in milk, with a spoon or fork.
  • Stirring only until flour mixture is moistened.
  • Batter will be thick and lumpy.
  • Spoon into muffin cups, dividing evenly between all 12 cups.
  • Bake for 20 minutes or until tops are golden brown.
  • When done, remove from muffin pan immediately.

2 cups self-rising flour
1/4 cup mayonnaise
1 1/4 cups whole milk

Steps:

  • Preheat oven to 425°F. Grease or spray muffin pan. Measure the flour by spooning it into a measuring cup then leveling the top off with a knife. Add the flour to a medium mixing bowl and twirl it around several times with a wire whisk to lighten the texture. Whisk in the milk and mayonnaise, just until combined. Do not over mix. (Small lumps are ok.) Set aside to rest for 5 minutes. Lightly stir the batter again then fill muffin cups about 3/4 full. Place in preheated oven - then immediately reduce the temperature to 400°F. Bake for 15 minutes. Remove from oven and butter the tops. Serve warm with real butter and a drizzle of honey.
