Light and easy cookies made with lemon cake mix.

1 (8 ounce) container frozen whipped topping, thawed
2 eggs
1 (18.25 ounce) package lemon cake mix
⅓ cup confectioners' sugar for decoration

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease baking sheets.
  • Beat together the whipped topping and eggs together. Add the lemon cake mix and continue to mix. Dough will be thick.
  • Drop by teaspoonfuls into a bowl of confectioners' sugar and roll to coat. Place cookies on the prepared baking sheets. Bake at 350 degrees F (175 degrees C) for 8 minutes.

I'm a great cook, but not so great baker, but these come out great every time. My favorite is Funfetti cake mix with French Vanilla Cool Whip.

1 (18 1/4 ounce) box cake mix (any flavor desired)
1 (8 ounce) container Cool Whip, thawed
1 egg

Steps:

  • Mix all ingredients.
  • Form into balls.
  • Roll in confectioners' sugar.
  • Bake at 350°F for 10 to 12 minutes.
  • Cool in pan a few minutes before removing.
