3 ounces instant pistachio pudding mix
20 ounces crushed pineapple in juice
8 ounces Cool Whip
1 1/2 cups white mini marshmallows

Steps:

  • Mix pudding with pineapple and juice.
  • Add cool whip and mix well.
  • Fold in marshmallows.
  • Smooth into a 9 by 13 pan. Chill at least 2 hours.

16 ounces whipped topping
1 package (3.4 ounce) instant pistachio pudding mix
2 cups miniature marshmallows
1 can (20 ounce) crushed pineapple, (do not drain)
1/2 cup chopped pistachios or walnuts
Additional whipped topping ((optional and for garnish))

Steps:

  • In a large bowl combine the whipped topping, pistachio pudding, marshmallows, and pineapple.
  • Cover the bowl with plastic wrap and chill for at least an hour. (Can be chilled up to 48 hours prior to serving.)
  • When you are ready to serve, top with additional whipped topping and sprinkle with chopped pistachio. (If you are like my grandma, you add one maraschino cherry on top!)

This is a light and fluffy dessert salad based on pistachio pudding; the pudding is made lighter with the addition of whipped topping. Add an extra can of mandarin oranges, if you like.

1 (3 ounce) package instant pistachio pudding mix
1 (12 ounce) container frozen whipped topping, thawed
2 large bananas, sliced
2 cups miniature marshmallows
1 (15.25 ounce) can fruit cocktail, drained
1 (11 ounce) can mandarin oranges, drained

Steps:

  • Dump instant pudding into a large mixing bowl. Add pineapple, and mix well. Mix in whipped topping. Stir in bananas, marshmallows, fruit cocktail, and mandarin oranges. Cover, and refrigerate until thoroughly chilled.
