Using 12 grain flour from Bulk Barn and a recipe that is a variation of the one they provide. (Bulk Barn is a Canadian food retailer specializing in bulk foods.) The list of grains, in the order on the label, is hard whole wheat flour, whole spelt flour, kamul flour, granola oats, ground brown flax seeds, quinoa seed, amaranth seed, barley flour, whole rye flour, dark buckwheat flour, hulled sunflower seeds and millet seeds. If you have a 1½ lb loaf bread machine, reduce the yield below from 2.0 lbs to 1.5 lbs to get the right quantities for your machine. I use a Black & Decker bread machine with a 1½ lb loaf pan. If you want a "lighter" bread, reduce the 12-grain flour by ½ cup and increase the white flour by ½ cup. If you want a "sweeter" tasting bread, replace the brown sugar with honey. (Note: I had to use whole wheat flour in the ingredients to get approximate nutrition values. Note to those who live in the U.S.A.: replace the white flour with bread flour.)

4 teaspoons oil
4 teaspoons brown sugar
2 teaspoons salt
2 cups white flour
2 cups whole wheat flour, Bulk Barn 12 grain
1 1/3 teaspoons bread machine yeast

  • Add ingredients in the above order in a 2 lb bread machine.
  • Select whole grain setting.

Number Of Ingredients 11

4 cups milk (Scalded)
1/2 cup white sugar
4 teaspoons white sugar
8 teaspoons salt
1 cup shortening melted (just under 1 cup when melted)
4 cups water
4 tablespoons fast rise yeast
2 cups 12 grain cereal
1 cup ground flax seed
5 cups whole wheat flour
White flour

Steps:

  • (1) In a large bowl put in sugars, salt shortening. (2) Scald the milk and pour over the above mixture. Stir until shortening is dissolved. (3) Add your water to bring down the temperature of the liquid to warm. (4) Add the 12 grain cereal and the ground flax and stir well. (5) Add the yeast to your flour and stir. (6) Add enough flour to your liquid to make it the right consistency so that you can flour your work surface and add the bread mixture and knead until elastic. (7) Grease a large bowl with shortening and put the kneaded bread into the bowl. Rub the top of the bread with shortening. Cover with a towel and place in a warm place to rise. (8) Once the bread has risen grease your bread pans and put bread in the pans, grease tops of your bread with butter or margarine, this will help bread to brown as it is baking. Let rise until double in size. (9) Bake in a 400F oven for 25-30 minutes. When bread is cooked remove from bread pans and place on a cake rack to cool. As soon a bread comes out of the oven grease tops again with butter or margarine.
