ROAST DUCK AND VEGETABLES
This roast duck and vegetables is one special and delicious meal, perfect for a festive occasion.

- Preheat the oven to 425F/220C. Set the racks so that you have enough space in the middle of the oven for your roasting pan with a rack to sit in with the duck on top.
- Clean out the duck completely and remove any excess far around the neck etc. Prick the skin all over with a fork (this helps the fat to drain as it cooks and makes the skin more crisp).
- Pour the boiling water over the duck, some on each side, with the duck sitting in the rack over a roasting pan. It will cause the skin to change color slightly and tighten up - this too helps it crisp. Pour any water held in the cavity into the pan and pat the duck dry all over. Don't throw away the water in the pan - leave it to steam the duck as it cooks initially.
- Rub salt and pepper all over the duck's skin, particularly the breast.
- Turn the duck breast side up, then roast in the middle of the oven for 45 minutes (this isn't the full cook, just when you turn).
- After the first 45min, put a wooden spoon into the neck space (the handle) and another, the other way round, inside the main cavity and carefully drain out the cavity into the baking pan. Turn the duck over to be back up then put back in the oven.
- As the duck is cooking, peel and cut the potatoes and carrots into large chunks. After the duck has cooked around 20-30 minutes on the second side, carefully add the potatoes and carrots into the fat drippings below the rack. Spoon a little of the fat over the top of the vegetables then return the pan to the oven.
- Once the duck has been in for 45 minutes on the second side (so 1 1/2 hours cooking), remove from the oven and turn again back to breast side up. Return to the oven for a final 45 minutes (giving 2 1/4 hours total).
- Peel the parsnip and cut into large chunks. Around 30 minutes before the end of cooking (so once it has been in for 15 mins after the last turn), carefully turn the potatoes and carrots in the bottom of the pan and add the parsnips. Return to the oven for the remaining 30 minutes, then take out of the oven. Remove the vegetables and keep warm while the duck rests around 5-10 minutes before you carve it.
- Remove the vegetables, draining them as you do, and keep warm. Drain any liquid from the inside of the duck and transfer it to a cutting board to rest around 5-10 minutes before you carve it.

CRISP-TENDER ROAST DUCK WITH CHERRY-ROSEMARY SAUCE

- Preheat the oven to 300 degrees F.
- Rinse the duck inside and out and pat dry. Trim any excess fat from the neck and cavity, snip off wingtips and discard. Mix 1 tablespoon salt and 1/2 teaspoon pepper in a small bowl, and sprinkle the bird inside and out. Using a paring knife, make dozens of slits through the skin and fat (taking care not to pierce the meat) all over both sides and all parts of the bird.
- Put the duck breast-side up on a rack in a roasting pan and roast for 1 hour. Take the bird out of the oven, transfer to a platter and carefully drain the fat from the pan into a measuring cup (you'll end up getting 2 to 3 cups). Return the duck to the pan, prick with the knife again, turn it breast-side down and roast another hour. Repeat each hour, roasting the duck for a total of 4 1/2 hours.
- While the duck cooks, make the sauce: In a small saucepan, heat 1 tablespoon duck fat over medium heat and cook the shallots until soft, about 4 minutes. Add the garlic and cook until fragrant, 1 minute. Add the cherries, stock, preserves, honey and rosemary, and simmer until slightly thickened, about 10 minutes. Remove from the heat, add the lemon juice, swirl in the butter and taste for salt and pepper. Set aside until the duck is finished.
- After 4 1/2 hours of roasting, turn the oven temperature up to 350 degrees F, prick the duck skin one last time, salt the skin again and return bird to the oven, breast-side up. Roast for 30 minutes until the skin is nicely browned.
- Remove from the oven, tent with foil and let rest for 20 minutes. Gently reheat the sauce over low heat. Carve the duck, put the pieces on a serving platter and serve with sauce.
TENDER ROAST DUCK WITH CITRUS & CARROTS

- Heat the oven to 200C/180C fan /gas 6. Scrape away any excess fat from the duck (you could keep this for duck fat potatoes), but keep any jelly. Put the carrots, garlic and orange wedges into a large roasting tin, then toss with the oil and season well. Season the duck legs, then sit them on top of the veg, skin-side up. Roast for 40 mins until the carrots are tender and the duck is turning golden.
- Stir the citrus juice, vinegar and sugar together until the sugar dissolves. Pour over the veg, add the jellified duck or chicken stock, then tuck in the bay and thyme here and there. Roast for another 10 mins until the carrots are surrounded with syrupy sauce and the duck is golden. Season the sauce to taste, then serve with mashed potatoes and watercress.

ROASTED CARROTS AND PARSNIPS WITH CITRUS BUTTER

- Preheat the oven to 425°F.
- In a small bowl, combine butter, orange zest, orange juice, 1/2 teaspoon salt and 1/4 teaspoon pepper; stir well to combine. Set the citrus butter aside.
- Peel the carrots and parsnips and cut them lengthwise into long wedges, which that will get a bit browned and crisp at the ends. If I am roasting young carrots small enough to cook whole or halved lengthwise, I like to leave a half inch or so of the greens attached-looks pretty. Parsnips will cook at about the same rate as carrots, so cut them into similar-size pieces.
- On a rimmed baking sheet, toss vegetables with oil; season with 1 teaspoon salt and toss again. Spread the vegetables flat and roast until tender and lightly browned (and more than lightly browned on the thinner edges), tossing halfway through, 20 to 30 minutes. If they seem to be getting too browned before tender, sprinkle them with a little water and keep roasting.
- When vegetables are roasted, place in a warmed dish and spoon the citrus butter on, tossing them gently to melt the butter and coat the roots. Serve warm.
ROASTED DUCK
I made this last year out of the blue, and my whole family enjoyed it. We had never had duck before, and it was a nice exchange for the traditional turkey. We served it with all the usual side dishes.

- Preheat oven to 375 degrees F (190 degrees C).
- Rub salt, pepper, and paprika into the skin of the duck. Place in a roasting pan.
- Roast duck in preheated oven for 1 hour. Spoon 1/4 cup melted butter over bird, and continue cooking for 45 more minutes. Spoon remaining 1/4 cup melted butter over duck, and cook for 15 more minutes, or until golden brown.

ROAST DUCK BREAST WITH CARROTS

- Marinate the breasts in salt, pepper and rosemary for two hours. Place in a cast-iron skillet and slowly cook breast down so the fat pours off, for 10 minutes.
- Preheat oven to 500 degrees. Place the breast skin side up on a roasting pan and roast for five to 10 minutes or until medium-rare.
- Meanwhile, slice the carrots. Pour off the fat from the cast-iron pan and add the stock with the carrots. Cook gently until the carrots are glazed with the stock.
- Place the duck breasts on a heated platter and garnish with the carrots and rosemary.

- Preheat the oven to 400°F.
- Line a baking sheet with aluminum foil. Arrange the carrots in a single layer on the foil. Drizzle with 2 tablespoons of the olive oil, salt and pepper to taste, and toss the carrots to fully coat with oil and seasoning. Bake until tender but not mushy, about 20 minutes.
- Meanwhile, make the dressing: In a large bowl, add the orange juice, Champagne vinegar, honey, and a pinch of salt and whisk to combine. Add the remaining 1 cup of oil in a slow stream, whisking continuously.
- When the carrots are finished, throw them in a serving bowl, top with a little dressing, and stir to combine. Eat them hot or cold.
