2 cups steel cut oats (no substitution)
4 cups water
3 cups milk (any variety)
2 teaspoons cinnamon
1/4 cup maple syrup
1 teaspoon vanilla extract
1/4 teaspoon kosher salt
1 teaspoon melted coconut oil (or cooking spray or butter)
1/4 cup brown sugar
chopped nuts (for serving)

Steps:

  • Grease slow cooker by brushing with melted coconut oil.
  • Mix oats, water, milk, maple syrup, brown sugar, cinnamon, vanilla, and salt together in a large slow cooker.
  • Place lid on the slow cooker and cook for 6 hours on low for firm texture and 8 hours on low for a softer texture. Alternatively, cook on high for 3-4 hours.
  • To serve, dish up oats and top with additional maple syrup and chopped nuts if desired.

Learn how to make the most delicious steel-cut oats here! These ultra creamy, toasted steel-cut oats are ready in under 40 minutes and reheat beautifully for the rest of the week. I suggest doubling the recipe if you'd like to make breakfast for the whole week. Recipe as written below yields 4 modest servings (about 3 cups total, or 3/4 cup per serving).

3 cups water
1 cup milk of choice: almond milk, cow's milk, coconut milk, etc.
1 tablespoon coconut oil or unsalted butter
1 cup steel-cut oats (choose certified gluten-free oats if necessary)
1/4 teaspoon salt
Optional mix-ins: ground spices like cinnamon, dried fruit like cranberries or chopped dates, toasted chopped nuts like walnuts, lemon or orange zest, etc.

Steps:

  • In a large saucepan, combine the water and milk. Bring the mixture to a simmer over medium heat. In the meantime, melt the coconut oil (or butter) in a 12-inch skillet over medium heat. Once shimmering, add the oats and cook, stirring occasionally, until golden and fragrant, around 2 minutes. This toasting step greatly enhances the flavor of the oats.
  • Stir the oats into the simmering liquid. Reduce the heat to medium-low, adjusting as necessary to maintain a gentle simmer. Cook for about 20 minutes, stirring occasionally, until the mixture is very thick.
  • Stir in the salt. Continue to simmer the mixture, stirring occasionally and reducing heat as necessary to prevent scorching on the bottom, until almost all of the liquid is absorbed, about 10 minutes. (If you doubled the recipe, your oatmeal might need an extra 5 minutes cooking time here.) The oatmeal will be very creamy when it's done.
  • Remove from heat and stir in any mix-ins that you'd like. Let the oatmeal rest for 5 minutes before serving so it has more time to thicken up and cool down a palatable temperature.
  • Portion oatmeal into bowls and add any toppings you'd like to portions that you intend to serve immediately. Let any extra oatmeal cool completely before covering and refrigerating for future breakfasts.

I found this recipe in Bon Appetit magazine in September 2003 and LOVED it! I never copied it, lost the magazine... and for some reason it never made it on to the epicurious web site. I was so bummed. Then lo and behold... I opened up an old box of cookbooks and found the magazine again. Here it is for safe keeping. I never use the bananas, but imagine they'd be good on it.

8 cups water
1 teaspoon water
2 cups steel cut oats
1 1/2 cups heavy cream
1/2 cup maple syrup
2 teaspoons cornstarch
sliced banana (optional)

Steps:

  • Bring 8 c water to a boil over high heat, add oats, reduce heat to medium and simmer until oats are cooked, about 25 minutes.
  • Meanwhile, bring cream and maple syrup to a boil over high heat. Reduce heat to medium low and simmer 20 minutes.
  • Mix cornstarch with remaining teaspoon of water in a small bowl and whisk into the cream mixture. Continue simmering until thickened, stirring frequently, about 5 minutes.
  • Divide oatmeal among bowls, pour cream over each and top with sliced bananas if desired.

1 cup milk
1 tablespoon butter (salted, or unsalted)
1 cup steel cut oats
1/2 teaspoon salt
2 tablespoons butter (salted, or unsalted)
3 large firm apples (about 1 1/2 pounds, peeled, cored, cut into 1/2-inch-thick slices)
1 tablespoon pure maple syrup, PLUS
1/2 cup pure maple syrup
1/2 teaspoon ground cinnamon
1/2 cup toasted pecans (OPTIONAL, rough chopped)

Steps:

  • OATS:.
  • Bring the water and milk to a simmer in a large saucepan over medium heat.
  • Meanwhile, heat the butter in a medium skillet over medium heat until just beginning to foam; add the oats and toast, stirring constantly with a wooden spoon, until golden and fragrant with a butterscotch-like aroma, 1 1⁄2 to 2 minutes.
  • Stir the toasted oats into the simmering liquid, reduce the heat to medium-low; simmer gently, until the mixture thickens and resembles gravy, about 20-25 minutes.
  • Add the salt, stir to combine and continue simmering, stirring occasionally with a wooden spoon until the oats absorb almost all of the liquid and the oatmeal is thick and creamy, with a pudding-like consistency, about 7 to 10 minutes.
  • Off the heat, let the oatmeal stand uncovered for 5 minutes. Serve immediately with maple sautéed apples. Garnish with toasted pecans if desired.
  • MAPLE SAUTÉED APPLES:.
  • (Begin cooking apples when the oats have about 5 minutes cooking time remaining.).
  • Melt the butter in a large nonstick skillet over medium-high heat. Add the apples and 1 tablespoon maple syrup; sauté until the apples are tender, about 6 minutes.
  • Mix in the remaining 1⁄2 cup maple syrup and cinnamon; simmer until slightly reduced, about 2 minute.
  • Makes about four servings of oatmeal topped with sauteed apples, and garnished with toasted pecans if desired.
