SPLENDA CHOCOLATE MARBLE CAKE

3 Tbsp dutch process cocoa
1 Tbsp splenda® sugar blend
1/4 tsp baking soda
2 1/2 Tbsp hot water
2 c sifted cake flour
1/2 c splenda® sugar blend
2 1/2 tsp baking powder
1/4 tsp salt
1/2 c butter
2 large eggs, lightly beaten
2/3 c milk
1 tsp vanilla extract
GLAZE (OPTIONAL):
2 Tbsp whipping cream
1/4 c semisweet chocolate morsels

Steps:

  • 1. Preheat oven to 325 degrees F. Grease and flour a 6-cup Bundt pan or an 8½- x 4½-inch loaf pan. Set aside.
  • 2. Combine cocoa, 1 tablespoon SPLENDA® Sugar Blend, and baking soda; gradually stir in hot water to form a paste. Set aside.
  • 3. Combine flour, SPLENDA® Sugar Blend, baking powder, and salt in a large mixing bowl. Cut butter into flour mixture with a fork or a pastry blender until crumbly. (This procedure may be done with a mixer at the lowest speed. Cover mixing bowl with a clean tea towel to prevent spattering).
  • 4. Combine eggs, milk, and vanilla in a small mixing bowl; add 1/3 of the egg mixture to flour mixture. Beat at low speed of an electric mixer until blended. Beat at medium speed for 30 seconds or until batter is smooth, stopping to scrape down sides of bowl. Repeat procedure 2 times. Set aside half of the batter. Add cocoa mixture to remaining batter, beating at low speed until blended. Alternate light and dark batters by tablespoonful's into prepared pan. Gently swirl batters with a knife to create a marble effect.
  • 5. Bake 45 to 50 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack 10 minutes. Remove from pan; cool completely on a wire rack. Drizzle with chocolate glaze, if desired.
  • 6. Glaze Directions: microwave cream in a glass measuring cup at HIGH 30 seconds or until hot. Add chocolate morsels; stir until smooth. Place mixture in a small heavy-duty zip-top plastic bag. Snip a tiny hole in 1 corner of bag, and drizzle chocolate over cake.

3/4 cup butter, softened
3 large eggs
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 1/4 cups cocoa powder
1 teaspoon baking soda
1 teaspoon baking powder
1/4 cup water or 1/4 cup coffee
1 1/2 cups 2% low-fat milk
1 1/4 cups Splenda sugar substitute, sugar blend

Steps:

  • Preheat oven to 350 degrees F.
  • COAT two eight-inch cake pans with cooking spray. Dust with flour. Set aside.
  • Beat butter at medium speed of an electric mixer until creamy; gradually add SPLENDA® Sugar Blend, beating well. Add eggs, one at a time, mixing well after each addition. Add vanilla; mixing until blended.
  • Combine flour, cocoa powder, baking soda, and baking powder in a medium mixing bowl. Set aside.
  • Combine water or coffee and milk. Set aside.
  • Add 1/2 of the flour mixture and mix on low speed until well blended. Add water and milk and mix on low speed until well blended. Add remaining flour mixture and beat at medium speed of an electric mixer until smooth.
  • Spoon batter evenly into prepared pans.
  • Bake in preheated oven for 35 to 40 minutes, or until a toothpick inserted in center comes out clean. Cool in pans on wire racks 10 minutes; remove from pans, and cool on wire racks.

2 1/4 cups all-purpose flour
1 cup Splenda granular, sugar substitute
1/2 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
2 eggs
1 1/2 cups sour milk
1/3 cup vegetable oil
1/2 cup no-sugar-added apricot jam
1/4 cup cocoa powder
2 tablespoons Splenda sugar substitute
4 teaspoons cornstarch
1/2 cup milk
1/4 cup corn syrup
1 teaspoon vanilla

Steps:

  • To make sour milk, (combine 4 tsp (20 ml.) vinegar with 1 1/2 cups.
  • (375 ml sweet milk).
  • Mix flour, Spenda Granular, cocoa, baking soda, and salt in large mixing bowl. Add eggs, milk, oil. Beat on Medium for 1 minute until smooth. Spread in 2 - 8 inch (20 cm) layer cake pans. Bake at 350F (180C) for 20 to 25 minutes.
  • Cool 5 minutes. Remove from pans and cool. Spread one layer with jam. Top with second layer. Glaze.
  • For Glaze:.
  • Combine cocoa powder, Splenda and cornstarch in saucepan. Whisk in 1/2 cup milk, then 1/4 cup corn syrup and 1 tsp vanilla. Stir to boiling, over medium heat. Simmer, stirring over low heat 1 minute, or until thick and glossy. Cool 5 minutes.
