8 ounces uncooked medium shrimp, peeled, deveined
1 teaspoon coarse salt
1/4 cup olive oil
2 garlic cloves
1 (1-inch) piece dried red chili pepper, seeded or 1 teaspoon cayenne pepper
Pinch paprika
1 tablespoon minced fresh parsley

Steps:

  • Place shrimp in bowl; sprinkle with coarse salt and toss. Let stand 15 minutes. Pat dry. Heat oil in medium skillet over high heat. Add garlic, and dried pepper and stir. When garlic browns, discard it and the dried chili. Add shrimp; stir until just cooked through, about 2 minutes. Transfer to serving dish with the oil. Sprinkle with paprika and parsley.

1/4 cup extra virgin olive oil
4 large garlic cloves, sliced in thirds lengthwise
1/2 teaspoon crushed red pepper flakes
12 large shrimp, fresh
1/2 lemon
1/4 teaspoon salt, to taste

Steps:

  • In a large skillet, combine oil, garlic & crushed red pepper.
  • When oil is hot & starts to sizzle around the garlic, add the shrimp & fry for 1 minute on each side.
  • Remove pan from the heat & squeeze lemon juice over shrimp & sprinkle with salt, to taste.
  • Serve very hot!

4 to 5 Tbs. olive oil
4 garlic cloves, finely minced
1 tsp. red pepper flakes
1 tsp. sweet paprika
1 lb. medium shrimp, peeled and deveined
1 to 2 Tbs. fresh lemon juice
1 to 2 Tbs. dry sherry
Salt and freshly ground black pepper, to taste
2 Tbs. chopped fresh flat-leaf parsley

Steps:

  • In a sauté pan over medium heat, warm the olive oil. Add the garlic, red pepper flakes and paprika and sauté for 1 minute until fragrant. Increase the heat to high, add the shrimp, lemon juice and sherry, stir well, and sauté until the shrimp turn pink and are opaque throughout, about 3 minutes. Season with salt and black pepper, sprinkle with the parsley and serve.

1 teaspoon smoked paprika
1 lb large shrimp, peeled and deveined (tails left on)
salt
2 tablespoons flat leaf parsley, chopped
1 loaf crusty bread, sliced

Steps:

  • In a large, heavy skillet, heat the olive oil over medium-high heat.
  • Add the garlic, crushed red pepper, and paprika, and cook for 30 seconds, stirring constantly.
  • Season the shrimp with salt, add them to the skillet, and cook until opaque, 1 to 2 minutes on each side. Remove from the heat; stir in parsley.
  • Transfer the shrimp mixture to a bowl and serve with bread for dipping and mopping.

This is a wonderful dish that I had while on the coast of Spain. It should be enjoyed with a good white wine or sangria, and warm crusty bread. I could not find a recipe that came close to what I had in Spain so I came up with this recipe myself. It is a big hit with family and friends. Enjoy. This can be made ahead of time and the recipe can doubled.

2 tablespoons butter
¼ cup olive oil
8 cloves garlic, minced
¼ teaspoon cayenne pepper, or to taste
3 pounds peeled and deveined medium shrimp (30-40 per pound)
¼ cup white wine
salt and black pepper to taste
3 tablespoons sweet paprika

Steps:

  • Melt the butter and olive oil in a large skillet over medium heat. Stir in the garlic and cayenne pepper, and cook until fragrant, about 1 minute. Increase the heat to high, and add the shrimp and white wine. Bring to a boil, and cook until the shrimp are no longer transparent in the center, about 3 minutes. Season with salt, pepper, and sweet paprika before serving.
