1/2 medium sweet onion (diced)
1 garlic clove (minced)
1 pound turnip greens, (rinsed well and roughly chopped)
1 tablespoon apple cider vinegar
1 teaspoon brown sugar
1/2 teaspoon kosher salt
1/2 teaspoon black pepper

Steps:

  • Heat oil in a large skillet over medium-high heat. Add onion and cook until soft.
  • Add garlic and cook one minute.
  • Add turnip greens, vinegar, sugar, salt and pepper and cook for another 5 to 7 minutes, stirring occasionally.

1 lb turnip greens, washed and cut chiffonade style (thin strips)
2 tablespoons olive oil
2 garlic scapes, finely chopped
1/4 teaspoon salt
1/4 teaspoon black pepper, ground

Steps:

  • In a large skillet over medium heat, add olive oil.
  • When olive oil is glistening hot and fragrant, add garlic scapes. Sautee until tender.

8 ounces green beans
6 ounces garlic scapes
1 tablespoon olive oil
1/2 red pepper, diced
salt, & freshly ground pepper
1 tablespoon balsamic vinegar

Steps:

  • Top& tail green beans.
  • Bring a large pot of salted water to a boil; add beans& blanch for 2 – 3 minutes or until crisp-tender.
  • Drain& refresh with cold water until beans are cold.
  • Trim garlic scapes& remove any seed pods.
  • Cut into pieces about the same length as the beans.
  • Blanch for 1 – 2 minutes; drain& refresh with cold water.
  • Heat oil in skillet on medium heat; add scapes& saute for 2 minutes.
  • Add beans& red peppers.
  • Toss together, cover skillet& cook for 2 minutes longer or until scapes are crisp-tender.
  • Uncover& season with salt, pepper& balsamic vinegar.

These are a treasure! I find them at farmers' markets in the early summer. This recipe is my favorite preparation, steamed and simple. I serve them as a warm side dish, but I always cook extra so I have leftovers in the refrigerator for cold snacks and salads. They have the texture of green beans with a light and fresh garlic flavor. Alternative preparations include sauted in olive oil or added to soups and stews.

1 lb early garlic greens
salt and pepper

Steps:

  • Trim garlic greens by cutting the top (pointy end) to within 1/2" of bud. There will be 6"-8" of green below bud.
  • Greens may be cut into any preferred length as you would with green beans. (I like to leave them long because they are beautiful and fun.).
  • Steam in steamer basket over boiling water approximately 8 minutes. Time may vary depending on size of green, so test at 5 minutes and adjust time accordingly.
  • Remove from steamer and place in serving bowl.
  • Toss with salt and pepper to taste.
  • Serve warm or cold.

3 stalks celery, chopped
1 tablespoon extra virgin olive oil
1 cup finely chopped garlic scape
1/2 cup finely chopped red onion
2/3 cup buttermilk
1/4 cup light mayonnaise
3 tablespoons chopped fresh dill
1 tablespoon Dijon mustard
3/4 teaspoon salt
3/4 teaspoon pepper

Steps:

  • Cover& cook potatoes in a pot of boiling salted water until tender, about 10 minutes.
  • Drain& place in a large bowl; add celery.
  • Heat oil in nonstick skillet over medium-high heat; fry scapes& onion, stirring occasionally, until onions are softened& scapes are tender-crisp, about 5 minutes.
  • Add to potatoes.
  • DRESSING: Whisk together buttermilk, mayo, 2 tbsp of the dill, mustard& seasonings in a bowl; pour over potato mixture& toss to coat.
  • If a moister salad is preferred, add a little more buttermilk.
  • Garnish with remaining dill.
  • Cover& refrigerate for up to 2 days.
