A wholesome, rustic bread to serve with pasta, soup or for making sandwiches. From Jennie Shapter's Bread Machine Cookbook (one of my favorites).

Number Of Ingredients 14

1/3 cup milk, can use lowfat
1/3 cup water
2 tablespoons olive oil
2 cups whole wheat flour
1 cup white bread flour
2 tablespoons wheat gluten
1/3 cup rolled oats
1/3 cup chopped walnuts
1 teaspoon minced garlic
1 teaspoon dried oregano
1 tablespoon fresh basil, chopped
1 teaspoon salt
1 teaspoon sugar
1 teaspoon fast-rising active dry yeast

Steps:

  • Add ingredients to the bread machine, according to the manufacturer's directions.
  • I mix all my flours, gluten and grains together, well, before adding to the bread machine.
  • Add the salt in one corner of the pan and the sugar in another.
  • Make a well in the flour and add the yeast in the middle.
  • Set on basic setting with normal crust and check at the end of 5 minutes to see if more liquid or flour is needed.
  • This makes a one pound loaf.

While at my DS's house, we played with our favorite Garlic Herb Challah #166356 and came up with this yummy version using cracked black pepper and Parmesan cheese. Although written here for mixing by hand (they are afraid to buy a bread maker for fear of turning into a 3-loaf-of-bread-per-week family. I understand their angst! ;D) you could pile everything into the Automatic Bread Machine and relax

Number Of Ingredients 15

1 1/4 cups water (room temp to warm, not ice cold)
2 teaspoons yeast (or one packet)
1 tablespoon sugar
1 tablespoon extra virgin olive oil
1 tablespoon garlic, minced
3 1/4 cups bread flour (my favorite is still King Arthur)
1 tablespoon sugar
1 tablespoon Italian herb seasoning, blend (or 1 t each of basil, thyme and rosemary)
1 teaspoon sea salt
1 teaspoon black pepper, cracked
1/4 cup parmesan cheese
1 tablespoon oil
1 egg
1 tablespoon water
1 tablespoon sesame seeds (optional)

Steps:

  • In a bowl or large measuring cup combine the water, sugar and yeast. Stir to mix. Set aside for about 10 minutes.
  • In a large mixing bowl, combine the flour, sugar, herbs, salt, pepper and Parmesan. Stir to mix.
  • Add the oil and the garlic to the yeast-water mix. Stir to mix.
  • Add the liquids to the dry ingredients. Stir to mix thoroughly. A dough ball will form.
  • Knead dough in bowl or lightly floured surface for about 8 minutes.
  • When finished kneading, coat all sides of the ball of dough with the 1T extra olive oil. Let rest in a draft free place (inside the oven will work) for about 1 1/2 to 2 hours -- until the dough has doubled in volume.
  • After that, 'punch down' the dough and knead briefly.
  • Form into loaf, place in baking pan (I line the pan with parchment paper so it doesn't stick to the pan) and let rest again for about 40 - 50 minutes.
  • Pre-heat oven to 350 degrees Fahrenheit.
  • Combine egg and water by whisking with fork. This is your 'egg wash'.
  • Using a soft basting brush or pastry brush, paint loaf with egg wash. If you are using the sesame seeds, sprinkle them on top now. Make 1 long superficial slice down the middle of the loaf or 4 diagonal slices.
  • Bake for about 33 - 35 minutes. Bread is done when it sounds hollow when tapped.
  • Enjoy with Italian foods, as toast or later on, dry and use as croutons.

This recipe came with the very first bread machine I ever had by Oster. It is still my families favorite out of all the recipes I have tried. Cooking time is based on the time it takes my bread maker to make the bread. I make rolls and breadsticks by using the dough only cycle. I make a dozen rolls or 2 dozen breadstick.

1 1/4 cups water
1 tablespoon butter, softened
2 garlic cloves, crushed
3 1/4 cups bread flour
2 tablespoons sugar
1 1/2 teaspoons salt
1/2 teaspoon dried rosemary, crushed
1/4 teaspoon dried thyme leaves
1/4 teaspoon dried basil
2 1/4 teaspoons bread machine yeast (or quick acting yeast)

Steps:

  • Put all ingredients into your bread machine in order per your owner manual. Bake on white bread setting for a 1 1/2 lb. loaf.

RUSTIC ITALIAN BREAD ABM



Rustic Italian Bread ABM image

This is the one I make all the time. I use the bread machine to make my dough and then bake in oven to get that rustic look. It rises nice and the crust and texture is great--give it a try. Prep time includes the total bread machine and rising time. You can also make this in your KitchenAid mixer instead of the bread machine, using you kneading hook. Oil bowl cover let rise in a draft free spot.

Number Of Ingredients 8

1 cup warm water
2 tablespoons olive oil
3 cups bread flour or 3 cups all-purpose flour
2 teaspoons granulated sugar
3/4 teaspoon salt
2 teaspoons active dry yeast
cornmeal, for baking sheet
1 egg white, slightly beaten

Steps:

  • Add flour, oil, salt, sugar, yeast and water to your bread machine according to its instructions.
  • Set on dough setting.
  • Always follow your machines instructions, when mixing open it and keep check on the dough. Dough should be in a nice round soft sticky to the touch ball. If it is not add more water, or add flour which ever is needed.
  • Remove when signal beeps and cycle is done.
  • Preheat oven to 375°F.
  • Sprinkle cornflour or cornmeal onto a baking sheet.
  • Punch dough down and form into a long or oval loaf.
  • Cover and let rise for 25 more minutes.
  • It should be doubled again by this time.
  • Uncover and slash the top with a sharp knife or razor.
  • Brush all over with the beaten egg white.
  • Bake 25 minutes to 35 minutes, until hollow sounding when tapped on bottom.
  • Cool.
