SIMPLE ASIAN RICE

Make this simple Asian Rice as a side dish for your favorite stir fries!

3 cups chicken stock
1 1/2 cups jasmine rice
1 tablespoon low sodium soy sauce
1 tablespoon sesame oil
Optional: 1/2 cup frozen peas
1/2 teaspoon kosher salt, only as needed
2 green onions, very thinly sliced

Steps:

  • Combine the rice and the chicken stock in a large saucepan or skillet, cover with a lid and bring to a boil. Reduce the heat to low and simmer for 18 minutes.
  • At the end of the cooking time, stir the rice and check the rice for tenderness. If the liquid has been absorbed, drizzle with the soy sauce and sesame oil and toss well to coat.
  • Add frozen peas, if desired, and stir to combine. The heat of the rice will cook them in just a minute or two. Taste the rice, and add salt, only if needed. Add the green onions, stir and keep covered until ready to serve. Enjoy!

2 tablespoons light soy sauce
1 tablespoon dark soy sauce
1 teaspoon sugar
1/8 teaspoon white pepper powder
3 tablespoons butter ((*see footnote 1))
3 eggs (, beaten)
4 cups overnight rice ((see blog post for description))
3 green onions (, chopped)
Salt to taste

Steps:

  • Combine the light soy sauce, dark soy sauce, sugar, and white pepper in a small bowl. Stir to mix well.
  • Add the butter into a large nonstick skillet and heat over medium-high heat until melted. Add the eggs. Cook until the bottom is slightly set. Scramble until the eggs are mostly cooked.
  • Add the rice onto the egg. Cook and chop the rice with your spatula, to separate the grains and coat the rice with egg. Cook until the heat builds up and you can hear a vibrant sizzling.
  • Swirl in the soy sauce mixture. Cook and stir constantly, until the rice turns an even color.
  • Add the green onion and stir to mix well.
  • Carefully taste the rice. Season lightly with sea salt if needed. Stir and mix thoroughly, so the salt is evenly dispersed.
  • Transfer the rice to a bowl and serve hot as a side or a light main dish.

3 tablespoons butter
1/2 cup sliced carrot
1/2 cup sliced celery
1/2 cup chopped onion
1 cup uncooked long grain rice
2 cups hot water
2 tablespoons soy sauce
2 teaspoons sugar
2 teaspoons dried parsley flakes
2 teaspoons chicken bouillon granules
1/2 teaspoon ground ginger
2-1/2 cups frozen peas (about 10 ounces), thawed

Steps:

  • In a large saucepan, heat butter over medium-high heat; saute carrot, celery and onion until tender, 3-5 minutes. Stir in rice until coated., Stir in water, soy sauce, sugar and seasonings; bring to a boil. Reduce heat; simmer, covered, until liquid is absorbed and rice is tender, about 15 minutes., Gently stir in peas. Cover and heat through.
