Texas Chowder image

Number Of Ingredients 20

3 cloves Garlic
2 Onions
1 bay leaf
1 jalepeno pepper
2 tablespoon corn oil
1 to 1 1/2 pounds ground meat (beef or pork)
3/4 teaspoon salt
3/4 teaspoon thyme
1/2 teaspoon sage
1/2 teaspoon cayenne pepper
1/2 teaspoon black pepper
2 teaspoons cumin
2 dashes Tabasco sauce
2 tablespoons chili powder
6 ounces tomato paste
6 ounces water
32 ounces beans
1 teaspoon sugar
1 salt, thyme, sage, cayenne, black pepper, cumin, Tabasco, onion, and chili powder in amount same as above
1 tablespoon masa (cornmeal)

Steps:

  • Carne: Saute garlic, one onion, bay leaf, and jalepeno pepper in enough oil to do the job, until onions just begin to turn brown at the edges.
  • Carne: Add ground meat and next 7 seasonings: cook until meat is well done. Stir in chili powder and cook briefly. Carne should be dark brown.
  • Chili preparation: Reduce heat and add tomato paste, one can water, beans, sugar and the other onion to the carne. Then repeat the 7 seasonings and chili powder in the same amounts as previously. Add masa.
  • Let the chili simmer for a couple of hours, then allow it to rest overnight, if possible.
