Saucy Cranberry Sauce image

I've done this for years, just made it up a little different this year. It's cooking now in the crock pot, so I hope it turns out good. addendum: Next time for our family I will leave out the orange zest.

Number Of Ingredients 11

1 - bag fresh cranberries
1 - cranberry jelly ( ocean spray)
1 - granny smith apples
1 1/2 cup(s) sugar
1/2 teaspoon(s) cinnamon
1/4 teaspoon(s) vanilla
8 - grates of lemon zest
1 tablespoon(s) lemon juice
8 - grates of orange zest
1/2 cup(s) orange juice
2-3 package(s) plain gelatin

Steps:

  • Wash Cranberries and pick out bad ones. place in crock pot. add the can of cranberry jelly cinnamon, vanilla and the zests add the lemon and orange juice add the sugar wash and quarter the apple, core and cut up in cubes add to the pot
  • Stir well cook for 3 hours. (I'm not sure on this yet.. I will up date when it gets done. It may to be thickened with gelatin. To do that, Soften the gelatin by placing the gelatin in ¼ cup cold water for 5 minutes. Microwave the gelatin on high for 30 to 75 seconds until it is a clear liquid. It will not set if it is cloudy. Start out at thirty seconds and go from there, then mix into the warm relish mixing well. Chill to set. One caution, I have read that if you cook the gelatin too long, it will become stringy.
  • I have added two packets of unflavored gelatin and it is still not quite as firm as the canned cranberry sauce, but it taste delicious. It turned out nicely firm, but not too firm. It takes wonderful. I am tempted to add a half of a teaspoon of chipotle powder, or some Thai chili paste for a little bit of heat.
