Mix to incorporate. Add water, oil, vanilla, pumpkin puree, pumpkin spice, and eggs. Mix well until mixture is smooth. Using a large cookie scoop, fill each liner 3/4 full with cake batter. Bake for 16 - 18 minutes or until toothpick inserted into center comes out clean. While cupcakes are cooling, make Pumpkin Spice Buttercream Frosting and set aside. Pipe frosting and any decorations you want onto cupcake and promptly devour 2. ---------------------- Pumpkin Spice Buttercream Frosting: ---------------------- Using a stand or hand mixer, blend butter until smooth & creamy. Add powdered sugar 1/2 cup at a time until fully incorporated. Add vanilla and pumpkin spice. Mix well. Add heavy whipping cream and blend well until fully mixed in. Fill pipping bag and pipe onto cake or cupcakes.
