PAPAYA SHRIMP SALAD image

1 lb. large shrimp
1 red onion
1/4 cup low sodium soy sauce
1/4 cup orange juice
2 teaspoons cointreau
1/2 medium papaya - cubed
2 heads boston lettuce
1 cucumber sliced
1 celery rib sliced
1 carrot sliced
1/4 cup olive oil
2 teaspoons fresh lime juice

Steps:

  • Mix boston lettuce, papaya, cucumber, celery, and carrots in a large bowl. Mix oilve oil and lime juice and drizzle over salad greens. Grill Marinated shrimp and red onion. Place shrimp and onions over the salad. Garnish side of salad with orange slices.
