Herbed Flank Steak image

This is tender and flavorful. I like to serve this with Baked Rice with Green Chilis (also posted).

Number Of Ingredients 7

1/2 c lime juice
1/4 c fresh oregano or 2 tbsp. dried
2 Tbsp olive oil
1/2 tsp salt
1/2 tsp pepper
4 clove garlic, crushed
2 flank steaks (about 1 1/2 pounds each)

Steps:

  • 1. Mix all ingredients, except steaks, in a shallow glass or plastic dish or in a large resealable heavy duty plastic bag. Add steaks and coat with marinade. Refrigerate 15-30 minutes, turning beef once.
  • 2. Remove from marinade and grill 4-5" from coals for 10-15 minutes for medium doneness, turning once. (If you have a gas grill, you're on your own. I don't know much about cooking on a gas grill.) Cut beef diagonally across grain into thin slices.
