- Place popcorn and nuts in a large bowl. In a large heavy saucepan, combine the brown sugar, butter, corn syrup, bourbon, salt and ginger. Bring to a boil over medium heat, stirring occasionally; cook and stir for 6 minutes. , Remove from the heat; stir in vanilla and baking soda (mixture will foam). Quickly pour over popcorn and nuts; mix well. , Transfer to 2 greased 15x10x1-in. baking pans. Bake at 250° for 1 hour, stirring every 15 minutes. Remove to waxed paper to cool completely. Store in airtight containers.
