Fresh Fig Bread image

3 eggs
1 1/2 cups sugar and oatmeal each
1/2 cup oil
1/4 cup rum
3 cups flour
2 cups mashed ripe figs
2 teaspoons baking soda
1 teaspoon cinnamon
1/2 cups buttermilk
1 cup chopped pecans

Steps:

  • heat oven to 350o, prep loaf or muffin pans
  • mix eggs and sugar, add figs, oil and rum.
  • sift flour, baking soda, salt and cinnamon, add to egg mix and add buttermilk. Blend
  • fold in pecans. Bake for about an hour for bread and less for muffins.
