Easy Carrot Cake... image

This was the first cake I ever made. It did crack the first time but it was still good...

Number Of Ingredients 9

1 cup(s) sugar
1/2 cup(s) vegetable oil
1 1/2 cup(s) all purpose flour
2 teaspoon(s) baking powder
1/4 teaspoon(s) salt
1 teaspoon(s) cinnamon
1 cup(s) carrots, grated
2 - eggs, beaten
1/2 cup(s) nuts, chopped

Steps:

  • Heat oven to 350F. In medium bowl mix sugar & oil together. Sift the dry ingredients,mix in carrots & add in the sugar mixture.
  • Add 1 egg in at a time & beat well with each egg. Then add in the nuts of any kind & mix very well. Then pour into pre oiled 2 1/2 inch loaf pan.
  • Bake for 55 to 60 mins. Cover with aluminum foil for the first 20 mins. It will reduce cracking. Serve warm or cold.
