Steps:
- 1. Preheat oven to 425*. Combine EVERYTHING except the bread, BBQ sauce, cheese, and onion straws in a large bowl.
- 2. Mix well, but take care not to OVER mix! It is a "loaf" afterall!
- 3. In a loaf pan that has been sprayed with non stick or spray olive oil, spread the meat mixture evenly. Top the loaf with your favorite BBQ sauce in an even but substantial layer. Cover with foil and bake for 430 mins- remove foil and bake for another 15-20 mins. The top should have nice caramelization.
- 4. Remove the meatloaf from the oven and recover with foil. Allow to rest. Meanwhile, toast your ciabatta buns! I do this with the layer of fresh mozzarella on the bottom bun, until nice and melty and the bread is crispy!
- 5. Assemble! Slice the loaf into desired slices for sandos. Lay slice on top of cheese. Add more BBQ sauce as desired, top with crispy onions, AND E N J O Y the comfort in your mouth!
