Steps:
- HORSERADISH SAUCE: In a small bowl, combine mayo, sour cream, lemon juice & horseradish; mix well. Refrigerate until ready to use. NOTE: Can be made the day ahead for flavors to marry.
- FISH: Preheat oven to 450 degrees F. Spray a shallow baking dish with cooking spray.
- Place fillets, skin side down, in the pan. Sprinkle shallots over fillets; pour wine evenly over all. Bake 6 - 8 minutes or until fish is opaque.
- Transfer salmon/shallots to serving plates. Top each serving with a heaping tbsp of horseradish sauce.
