Steps:
- Cream shortening or butter; add sugar gradually. Add egg yolks one at a time and beat each in thoroughly. Beat in flavoring. Mix flour with baking powder and salt. Add milk and flour mixture alternatively into wet mixture. Beat egg whites until they peak softly, and fold in last, blending well. Pour mix into a 13 x 9 inch pan, a 10 inch tube pan that has been buttered and floured or 3 standard cake pans. Bake at 350 degrees for 1 hour, until the cake shrinks a little from the sides of the pan and a toothpick placed in the middle comes out clean. (*ovens differ - check the cake after 45 minutes) Delicious with lemon-flavored icing!
