GWEN'S OLD-FASHIONED POTATO-BEEF CASSEROLE

3 pounds red potatoes, peeled and sliced 1/4-inch thick
Salt
Vegetable oil, to coat pan
1 pound lean ground beef
1/2 onion, chopped
4 tablespoons (1/2 stick) butter
1/4 cup all-purpose flour
Black pepper
2 cups milk
2 cups grated sharp Cheddar
1/2 cup unseasoned dry breadcrumbs

Steps:

  • Place the potatoes in a large saucepan with water to cover by 1 inch. Add a generous pinch of salt and cook for 15 minutes, or until tender. Potatoes cook quickly. Test often for tenderness and don't overcook them. Alternatively, cook the potatoes in a pressure cooker for 5 minutes, releasing the pressure immediately to prevent overcooking. Drain the potatoes and arrange them in a 6- by 9- by 2-inch casserole dish.
  • In a large skillet, add a little oil to coat the pan. Combine the beef and onion and cook together over medium heat until the beef is browned and the onion softened, about 10 minutes. Drain excess fat.
  • Preheat the oven to 350 degrees F.
  • Melt the butter in a medium saucepan and whisk in the flour to make a roux. Cook over medium heat, whisking constantly, until the mixture bubbles and the flour turns light brown in color. Gradually whisk in the milk and continue to stir while cooking over medium heat. When the mixture thickens, season with salt and pepper, then stir in the cheese and browned beef and onions.
  • Pour the ground beef mixture over the potatoes and bake the casserole for 20 minutes, until heated through and bubbling. Sprinkle the breadcrumbs on top of the casserole and bake until the crumbs are toasted, about 5 minutes longer.

3 medium white potatoes (pared, and sliced very thin)
1 lb lean ground beef
1/2 cup onion, chopped
1/4 cup celery, chopped
1 teaspoon garlic, minced
1 teaspoon celery leaves (fresh or dried optional)
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon red pepper flakes (spicy optional)
2 tablespoons butter
2 tablespoons flour
3/4 cup milk (add a little more if needed)
1/2 cup grated cheddar cheese
1/2 teaspoon nutmeg
1/4 teaspoon chili powder (optional)
1 pinch salt
1 pinch pepper
1 pinch paprika
grated cheddar cheese

Steps:

  • Spray a baking dish with cooking spray.
  • Preheat oven 375 degrees.
  • Spray a large skillet with cooking spray and brown ground beef.
  • Drain ground beef, if necessary.
  • Add onions and celery to same skillet and cook until soft, adding rest of spice ingredients through pepper flakes. Stir well. But in a bowl and set to the side.
  • In same skillet, melt butter (or use 1 tablespoon of leftover grease from browning ground beef). Add flour to butter, stirring for one minute over medium-high heat.
  • Gradually add milk and cook till bubbly and thickened.
  • Add cheese, nutmeg, salt, pepper, and chili powder continue to stir until melted.
  • Spoon 1/4 cup of the ground beef mixture and spread evenly on bottom of a baking dish.
  • Add 1 layer of potatoes.
  • Alternate ground beef mixture, then potatoes until completely used.
  • Pour cheese sauce over ground beef and potato mixture.
  • Top with a pinch of paprika and grated cheese.
  • Bake for 1 hour, or until potatoes and beef are bubbly and done.

Sliced potatoes in a delicious creamy sauce on the bottom then topped with a ground beef mixture --- instead of layering the potatoes you can just mix them with the sauce in a large bowl transfer to the baking dish then top with the ground beef mixture either way is fine but the potatoes will cook a little faster if mixed with the sauce --- feel free to throw in some cooked chopped green beans, mushrooms, corn niblets to the ground beef mixture or whatever you wish, I also like sprinkle some grated cheddar cheese over the potato mixture before topping with the ground beef and then again after the casserole has been cooked, this casserole is very versatile and you don't have to worry about the exact amounts --- to save time you may cook the ground beef mixture a day ahead and refrigerate, all ingredients may be reduced to half if desired to yield 4-6 and baked in a smaller baking dish--- NOTE some of the reviewers are stating that the potatoes are taking a long time to cook so you may want to pop them in the microwave first just to soften slightly,

1 1/2 lbs ground beef (or use bulk Italian sausage meat, can increase the ground beef slightly)
1 medium onion, chopped
1 small green bell pepper, seeded and chopped (optional)
4 garlic cloves, finely chopped (or to taste)
1/2 teaspoon dried chili pepper flakes (adjust to taste) (optional)
1 teaspoon seasoning salt (or to taste) or 1/2 teaspoon white salt (or to taste)
1/2 teaspoon fresh ground black pepper (or to taste)
5 -6 russet potatoes (peeled and sliced thinly, or use as many as desired)
2 cups shredded cheddar cheese (or to taste)
2 (10 3/4 ounce) cans condensed cream of chicken soup, undiluted (using any other flavor of soup will not be as good)
1 small onion, chopped (about 1/3 cup)
3/4 light cream
1/2 cup sour cream
1/4 cup grated parmesan cheese
1 teaspoon garlic powder

Steps:

  • In a skillet cook the ground beef with onion, bell pepper and chili flakes (if using) until no longer pink; drain fat over a colander.
  • Return to pan and add in garlic, season salt and black pepper; cook stirring with a wooden spoon until the meat is lightly browned (I usually add in about 1-2 tablespoons bacon fat that I keep frozen in my freezer to the meat while browning for added flavor and it also helps to brown the meat) set aside.
  • For the sauce; in a medium bowl mix together the undiluted soup with onion, milk, sour cream, Parmesan cheese, garlic powder, seasoned salt and black pepper to taste; mix well to combine.
  • In a greased 13 x 9-inch baking dish or a large oval casserole dish, alternately layer the sliced potatoes on bottom of the baking dish, then soup mixture (I like to sprinkle grated cheddar cheese on top of the soup mixture) then the ground beef mixture on top.
  • Since this is a large casserole I strongly suggest to place the baking dish on a jelly-roll sheet in case of any spills.
  • Bake covered with foil for about 1 hour at 350 degrees F.
  • Uncover and continue baking for another 20-30 minutes or until the potatoes are tender (baking time will vary depending on the thickness of your sliced potatoes).
  • Remove from oven then sprinkle with grated cheddar cheese; return to oven for 4-5 minutes or until the cheese has melted.

1 large onion, chopped (2 1/2 cups)
4 ounces button or cremini mushrooms, chopped (1 1/2 cups)

3 tablespoons extra-virgin olive oil
1 pound ground beef (90 percent lean)
3 tablespoons cornstarch
2 tablespoons Worcestershire sauce
10 ounces frozen classic mixed vegetables (2 cups)

Steps:

  • Preheat oven to 400°F. In a dry large skillet over medium-high heat, cook onion and mushrooms with 1 teaspoon salt, stirring occasionally, until mushrooms release their moisture, 6 to 8 minutes. 2 pounds beef stew meat, cut into 3/4 inch pieces
1 large onion, thinly sliced
1 cup water
1 (10.75 ounce) can condensed cream of mushroom soup

¼ teaspoon ground black pepper
4 large potatoes, peeled and chopped

This recipe is from Trisha Yearwood's cookbook and she has made it on her show. It is her mom's recipe. The casserole has mild flavor since it is from long ago so if you require a lot of seasoning kick it up a notch in your own way. It is a rich casserole with potatoes and ground beef. Perfect to whip up for a meat and potatoes guy, a cold night's dinner or anytime you want a throwback to an easier time. Kids and adults enjoy it. The hardest part is peeling all the potatoes but other than that it is easy. Serve with a vegetable or salad. Enjoy! ChefDLH

3 lbs red potatoes, peeled and sliced 1/4-inch thick
salt
vegetable oil, to coat pan
1 lb lean ground beef
1/2 onion, chopped
4 tablespoons butter
1/4 cup all-purpose flour
black pepper
2 cups milk
2 cups grated sharp cheddar cheese
1/2 cup unseasoned dry breadcrumbs

Steps:

  • Place the potatoes in a large saucepan with water to cover by 1 inch. Add a generous pinch of salt and cook for 15 minutes, or until tender. Potatoes cook quickly. Test often for tenderness and don't overcook them. Alternatively, cook the potatoes in a pressure cooker for 5 minutes, releasing the pressure immediately to prevent overcooking. Drain the potatoes and arrange them in a 6- by 9- by 2-inch casserole dish.
  • In a large skillet, add a little oil to coat the pan. Combine the beef and onion and cook together over medium heat until the beef is browned and the onion softened, about 10 minutes. Drain excess fat.
  • Preheat the oven to 350 degrees F.
  • Melt the butter in a medium saucepan and whisk in the flour to make a roux. Cook over medium heat, whisking constantly, until the mixture bubbles and the flour turns light brown in color. Gradually whisk in the milk and continue to stir while cooking over medium heat. When the mixture thickens, season with salt and pepper, then stir in the cheese and browned beef and onions.
  • Pour the ground beef mixture over the potatoes and bake the casserole for 20 minutes, until heated through and bubbling. Sprinkle the breadcrumbs on top of the casserole and bake until the crumbs are toasted, about 5 minutes longer.
  • Cook's Note.
  • Because all the ingredients are fully cooked, if they are still hot when you assemble the casserole, the baking time can be greatly reduced or even eliminated; simply brown the crumb topping under the broiler for a couple of minutes.

This recipe came from a church cookbook, so I have no way of knowing whether it came from another source, or if this was someone's own creation. Regardless, it has been a family favorite ever since. Make sure you thaw the broccoli first, so it gets cooked enough. Otherwise, you will end up with cold, half-frozen broccoli in your casserole. (Ask me how I know . . . )

1 (2 7/8 ounce) can French-fried onions
1 medium tomatoes, chopped
1 (10 1/2 ounce) can cream of celery soup
1/3 cup milk
1 cup cheddar cheese, shredded
1/4 teaspoon garlic powder
1/8 teaspoon black pepper

Steps:

  • Place potatoes on bottom and sides of a 9" x 13" casserole dish. Bake at 400 degrees Fahrenheit for 10 minutes.

2 cups frozen mixed vegetables (from 1-lb bag)
1 jar (12 oz) beef gravy
1/2 teaspoon salt
1 bag (28 oz) frozen potatoes O'Brien with peppers and onions, thawed
2 cups shredded Swiss cheese (8 oz)

Steps:

  • Heat oven to 350°F. Spray 12x8-inch (2-quart) glass baking dish with cooking spray. In 10-inch skillet, cook ground beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in mixed vegetables, gravy and salt. Cook 3 to 4 minutes or until vegetables are thawed and mixture is thoroughly heated.
  • In baking dish, layer 3 cups of the potatoes and 1 cup of the cheese. Spoon ground beef mixture over cheese. Top with remaining potatoes. Cover with foil.

This is a recipe I have convered to be used by our Nuwave/Flavorwave ovens. This is good old comfort food! You can ommit the potatoes if you are looking for a good mac and cheese. Note: when adding the bread crumb topping, add a bit of butter or margarine on top, I cut little peices of butter on the top when doing the last browning. It makes the top less crumby.

Found a similar recipe on the internet and tweaked it. Made it the first time tonight for dinner - was a big hit as there were no leftovers!

2 lb ground beef
1 small onion, diced
4 medium potatoes, bakers
2 can(s) cream of mushroom soup
1 c sour cream
1 c milk
2 c cheddar cheese, shredded
salt and pepper to taste
1 c peas or green beans (optional)

Steps:

  • 1. Brown ground beef & onion, drain fat. Season with salt and pepper to taste.
  • 2. Slice potatoes very thin (I use a mandolin). Mix soup, sour cream and milk.
  • 3. In a 13x9 casserole, place a layer of potato. Top with a layer of ground beef and onion. Add 1/2 cup veggie, if desired.
  • 4. Pour on half the sauce and top with 1 cup of the cheddar cheese. Repeat with another layer.
  • 5. Cover with foil and bake at 350 for 1 hour. Remove foil and bake another 10 minutes, or until cheese is golden brown.

1 onion, chopped
3 garlic cloves, chopped
2 green peppers, seeded and chopped
8 green onions, thinly sliced
1 lb lean ground beef
2 tomatoes, chopped
1 cup barbecue sauce
4 large baking potatoes, thinly sliced
1 cup cheddar cheese, shredded

Steps:

  • Heat oil in non-stick skillet.
  • Add onion, garlic, peppers and green onions, and cook until onion is starting to brown.
  • Add ground beef and cook, stirring occasionally until cooked through.
  • Add tomatoes and season with salt and pepper.
  • Add barbecue sauce and cook until all is well-coated. Remove from heat.
  • Preheat oven to 350ºF.
  • Spray a large baking pan with cooking spray.
  • Arrange alternate layers of potatoes, beef mixture, and cheese, ending with potatoes. (reserve 1/4 cup cheese).
  • Cover with foil and bake 40 minutes.
  • Uncover and top with remaining cheese.
  • Bake, uncovered, until potatoes are cooked through, about 15 minutes more.
  • Serve immediately.
