PASTA E FAGIOLI (OLIVE GARDEN COPYCAT)

1 lb lean ground beef
1 tbsp olive oil
2 medium carrots (diced into small cubes)
1 large onion (diced into small cubes)
1 stalk celery (diced into small cubes)
3 cloves garlic
15 oz canned diced tomatoes
15 oz tomato sauce
32 oz chicken broth
15 oz canned Great Northern beans (drained and rinsed)
15 oz canned Kidney beans (drained and rinsed)
1 cup ditalini pasta
1 tbsp Italian seasoning
1 tsp salt (adjust to taste)
1 tsp black pepper (adjust to taste)
2 tbsp fresh basil ((optional))

Steps:

  • On medium heat, preheat a large pot or dutch oven with oil. Add ground beef and let it brown (3-5 minutes). As its cooking, be sure to break it apart into small pieces.
  • Remove cooked beef from the pot. Drain of excess fat and set aside.
  • In the same pot, add diced carrots, onion, celery and pressed garlic. Saute until the vegetables are softened (about 4 minutes).
  • Add canned diced tomatoes, tomato sauce, and beef back to the cooking vegetables in the pot. Stir to combine together.
  • Add Great Northern and kidney beans to the mix. Pour chicken broth to the pot and let simmer for about 10 minutes.
  • Add pasta, Italian seasoning, salt and pepper and let it cook for another 10 minutes.
  • Serve right away with a sprinkle of basil or parmesan cheese.

2 tablespoons extra virgin olive oil
1 tablespoon garlic, chopped
1/2 cup kalamata olive, pitted and chopped
1/2 cup green olives with pimiento, chopped
1/4 cup small caper, rinsed
1/2 cup red wine
1 cup tomatoes, diced
29 ounces tomato puree
1/2 teaspoon salt
1/4 teaspoon crushed red pepper flakes
2 medium red bell peppers, cut in 1-inch pieces
1 tablespoon sugar
2 fresh sweet basil leaves, chopped

Steps:

  • HEAT olive oil in a small sauce pot; add garlic and sauté for one minute (do not brown). Add bell peppers and sauté until al dente. Add olives and capers and stir. Add red wine and bring to a boil. Add remaining ingredients except basil.
  • BRING to a boil, reduce to low heat and simmer for approximately 30 minutes. Add basil to sauce and stir well; remove Siena sauce from heat.
  • SERVE over your favorite pasta.
  • GARNISH with chopped basil, if desired.

1 cup tomatoes, diced
2 (16 ounce) cans tomato puree
1/2 teaspoon salt

2 medium red bell peppers, cut in 1-inch pieces
1 tablespoon sugar
2 fresh basil leaves, chopped
1 lb pasta, cooked
basil leaves (garnish)

Steps:

  • Heat olive oil in a small sauce pot. Add garlic and sauté for one minute (do not brown). Add bell peppers and sauté until al dente. Add olives and capers and stir. Add red wine and bring to a boil.

1/4 cup lean smoked bacon, cut into 1 inch x 1/4 inch x 1/4 inch strips
2 cups tomato sauce
1/4 teaspoon crushed red pepper flakes
1 lb spiral shaped pasta
1/4 cup parmesan cheese, grated
2 tablespoons romano cheese, grated
1/2 cup fresh basil, shredded

Steps:

  • Heat bacon in a large skillet over medium-low heat. Cook until bacon renders its fat and begins to brown. Stir in crushed red pepper and cook 1 minute. Add tomato sauce and bring to a boil.
  • Cook pasta according to package directions. Drain pasta, reserving 1/2 cup of cooking liquid. Return pasta to pot.
  • Add bacon/tomato sauce mixture and reserved pasta cooking liquid to pot. Bring to a boil and remove from heat. Stir in grated cheeses and basil.
  • Toss to mix and serve immediately.
