EVIE'S RHUBARB PIE WITH OATMEAL CRUMBLE
Rhubarb is sweetened and topped with a crunchy oat topping in this delicious and easy to make pie. A dear family friend always grew rhubarb and made this pie with her bounty each year. People are skeptical when they hear it is a rhubarb pie without strawberries but after only one taste, they understand the magic of this pie. Serve with vanilla ice cream for added sweetness!

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Toss the rhubarb with 1 1/2 cups of sugar and the tapioca in a large bowl. Drizzle with the melted butter and toss again to coat. Pour the rhubarb into the pie crust, and set aside.
- Mix together the oats, 1/4 cup sugar, flour, softened butter, and cinnamon in a small bowl until evenly blended. Sprinkle the oat topping over the rhubarb.
- Bake in the preheated oven for 15 minutes, then reduce the heat to 325 degrees F (165 degrees C), and continue baking until rhubarb is tender enough to pierce with a fork, about 30 minutes more. Allow to cool to room temperature before serving.

OATMEAL RHUBARB CRUMBLE

Steps:
- Cook the fruit with the honey, water and lemon juice until it is soft but not mushy. Place in a deep pie dish.
- Sift the flour, then mix together the ingredients for the crumble in the order given above. Warm the butter or margarine until it is soft (but not oily) before adding in. Once the crumble has been well mixed, sprinkle evenly over the fruit.
- Bake in a pre-heated oven at 400F/200C/gas mark 6 for 20 minutes in the hottest part of the oven or until the crumble is brown and crunchy.
PEACH-RHUBARB PIE WITH OATMEAL CRUMBLE TOP
Steps:
- Preheat oven to 425ºF Combine sugar, flour, cinnamon, lemon juice, egg and water. Mix thoroughly. Now, stir in rhubarb and peaches. Pour evenly across pie crust. For crumble topping, combine all ingredients but the butter. Once the ingredients are combined, dice the butter, and gradually add it to the mixture. Once the mixture has a crumbly consistency, distribute evenly on top of the pie. Bake at 425ºF for first 10 minutes then reduce to 350ºF for 35 minutes.
