1/2 cup sugar
1 tablespoon baking powder
1 tablespoon baking soda
2 teaspoons cinnamon
1 cup raisins
1/4 teaspoon salt
1/2 cup applesauce
1/2 teaspoon lemon, rind of, grated
1 1/4 cups skim milk, at room temperature
1 teaspoon vanilla
1 egg white, whipped

Steps:

  • Preheat oven at 350.
  • Prepare 2 bread pans with cooking spray and flour.
  • In a mixing bowl, combine flour, sugar, baking powder, baking soda, cinnamon, and salt.
  • In another mixing bowl, combine applesauce, raisins, lemon peel, milk, vanilla, and egg white.
  • Mix dry ingredients with wet ingredients just until moistened.
  • Pour batter into prepared pan (s).
  • Bake for 1 hour.

1 1/2 cups oat bran
1/2 cup whole wheat flour
1/4 cup packed brown sugar
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon salt
1 cup buttermilk
1 egg
1 tablespoon grated orange rind
2 tablespoons orange juice
1 peeled and diced apple
1 cup raisins

Steps:

  • In large bowl, combine flour, sugar, oat bran, baking powder and soda, salt and cinnamon.
  • Combine buttermilk, egg, orange rind and juice in a separate bowl.
  • Stir wet ingredients into dry ingredients, mixing just until moistened.
  • Stir in apples and raisins.
  • Spoon into greased muffin tins.
  • Sprinkle with wheat germ.
  • Bake at 400 for 18-20 minutes.

1 orange, with peel, cut up
1/2 cup orange juice
1 egg
1/4 cup butter
1/4 cup unsweetened applesauce
1 1/4 cups flour
1/2 cup natural bran
1/2 cup white sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 cup blueberries

Steps:

  • Cut orange into pieces, remove seeds, leave peel on.
  • Put in blender and puree along with orange juice.
  • Add egg, butter and applesauce.
  • Puree again.
  • Combine dry ingredients, stir in contents of blender.
  • Barely mix in blueberries.
  • Spoon muffin cups 3/4 full.
  • Bake at 375 for 17 minutes.

1 cup sugar
2 tablespoons butter
1 egg
1 orange, rind of, grated
1/2 cup orange juice
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup seedless raisin
1/2 cup boiling water

Steps:

  • Pour 1/2 a cup boiling water of the raisins, add the rind of 1 orange. Let cool.
  • Mix together butter and sugar; cream until fluffy. Add egg, juice, and dry ingredients and blend.
  • Stir in cooled raisin mixture. Pour into prepared bread pan and bake 1 hour at 350.

1/3 cup all-bran cereal
4 teaspoons baking powder

1 1/4 cups milk
2 eggs, beaten
1/2 cup oil
1 -1 1/2 cup raisins
1/3 cup oatmeal
1/4 cup brown sugar
1 tablespoon butter, softened

Steps:

  • Preheat oven to 325.
  • Grease bottom only of a 9x5x3-inch loaf pan.
  • TOPPING--------.
  • In a small bowl, combine oatmeal, brown sugar, and butter mixing till crumbly; set aside.
  • BATTER---------.
  • In a large bowl mix together flour, oatmeal, bran cereal, baking powder, salt, cinnamon, and brown sugar.
  • Stir in milk, eggs, and oil; mixing just to moisten.
  • Fold in raisins.

1/4 cup packed brown sugar

2-1/4 teaspoons active dry yeast
1/2 cup raisins

Steps:

  • In bread machine pan, place the first eight ingredients in order suggested by manufacturer. Select basic bread setting. 1 cup water
2 cups rolled oats
1 cup bran cereal (such as Kellogg's® All-Bran®)
1 cup whole wheat flour
¾ cup white sugar
1 teaspoon salt
1 teaspoon baking soda
1 cup milk
1 ½ teaspoons lemon juice
1 egg

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch loaf pan.
  • Bring raisins and water to a boil in a small saucepan, reduce heat to medium, and boil 5 minutes; set aside to cool.
  • Mix rolled oats, bran cereal, whole wheat flour, sugar, and salt in a bowl. Mix milk with lemon juice in a small bowl and let stand 1 or 2 minutes to sour. Stir baking soda into sour milk until dissolved. Pour milk mixture into dry ingredients; beat egg into the mixture. Stir raisins and their liquid into the batter. Pour batter into prepared pan.
