The BEST Garbanzo Bean Stew of your Life | Spanish Potaje de Garbanzos image

4 tbsp extra virgin olive oil (65 ml)
1/2 onion
1/2 green bell pepper
1/2 red bell pepper
5 cloves garlic
1 tomato
1 large potato
20 oz cooked canned garbanzo beans (570 grams)
1 tsp sweet smoked Spanish paprika (2.30 grams)
3 cups vegetable broth (710 ml)
1 bay leaf
2 slices baguette
1 cage-free organic egg
sea salt & black pepper
handful freshly chopped parsley

Steps:

  • Cut 1 large potato (peeled & washed) into small chunks that are 1/2 inch (1.25 cm) thick, roughly chop 1/2 green & 1/2 red bell pepper, roughly dice 1/2 onion, roughly mince 3 cloves garlic, finely grate 1 tomato and drain one 20 oz (570 grams) can or jar of cooked chickpeas into a sieve and rinse under cold water
  • Heat a stock pot with a medium-high heat and add in a generous 2 tbsp (35 ml) extra virgin olive oil
  • After heating the olive oil for 1 minute, add in the diced onion, chopped bell peppers and minced garlic, mix with the olive oil, after 5 minutes and the vegetables are lightly sauteed, add in the grated tomato and cook for 1 to 2 minutes, then add in the chopped potatoes, drained chickpeas, 1 tsp (2.30 grams) sweet smoked paprika and season with sea salt & black pepper, gently mix together until well combined
  • Then add in 3 cups vegetable broth and 1 bay leaf, mix together and bring to a boil, then place a lid on the stock pot and lower the fire to a low-medium heat
  • Meanwhile, roughly chop 2 cloves garlic and cut 2 slices of baguette into small squares
  • Heat a small fry pan with a medium heat and add in 2 tbsp (30 ml) extra virgin olive oil, after 2 minutes add in the chopped garlic and cook for 1 to 2 minutes or until lightly sauteed, then add the garlic into a mortar, then using the same pan with the same heat, add in 1 egg and cook until well done, including the egg yolk, then add into the mortar with the garlic, and finally fry the pieces of baguette in the same pan until lightly fried, add into the mortar, then add in 2 tbsp (7.60 grams) fresh parsley and a pinch of sea salt, using a pestle pound down until you for a paste
  • After simmering the stew for 25 minutes, remove the lid, add the thickner and mix together, cook for another 2 minutes with the lid off, then remove from the heat
  • Transfer the stew into shallow bowls and sprinkle with freshly chopped parsley, enjoy!

I recently went to Columbia Restaurant in West Palm Beach and absolutely loved this soup. Cooking time does not include soaking beans.

1/2 lb uncooked garbanzo beans, dried (also called chickpeas)
1 ham bone
1 beef bone
2 quarts water
1 tablespoon salt
1/4 lb salt pork, cut in thin strips
1 onion, finely chopped
1 chorizo sausage, sliced in thin rounds (Spanish sausage)
2 potatoes, peeled and cut in quarters
1 pinch saffron
1/2 teaspoon paprika

Steps:

  • Wash garbanzo beans. Soak overnight with 1 tablespoon salt in enough water to cover beans. Drain the salted water from the beans.
  • Place beans in 4-quart soup kettle; add 2 quarts of water and ham and beef bones. Cook for 45 minutes over low heat, skimming foam from the top.
  • Fry salt pork slowly in a skillet.
  • Add chopped onion and sauté lightly. Add to beans along with potatoes, paprika, and saffron. Add salt to taste.
  • When potatoes are tender, remove from heat and add chorizo. Serve hot in deep soup bowls. Serves 4.

I love this hearty savory soup on cold winter days with a big slice of crusty rustic bread. If there's any left over it's even better the second day.

Number Of Ingredients 9

1 lb kielbasa or 1 lb other spicy cured sausage, cut in 1/2-inch pieces
2 medium onions, cut in 1/2-inch pieces
3 garlic cloves, minced
2 quarts chicken stock
4 medium potatoes, peeled and cut in 1/2-inch cubes
2 (15 ounce) cans garbanzo beans, drained
1 chicken bouillon cube
2 (5 g) packets sazon goya with azafran or 2 (1 g) packets Vigo flavoring and coloring
1 small bay leaf

Steps:

  • If the sausage has casings, remove them before cutting the sausage in pieces.
  • Sauté sausage in a soup pot over medium heat until fat is rendered.
  • Add onions and sauté until onions are translucent. Add garlic and sauté 2 more minutes.
  • Stir in remaining ingredients. Bring to a boil then reduce heat to medium low.
  • Boil gently for about 25 minutes.
  • Remove bay leaf before serving.

Our home town is Tampa Bay and we always visit our favorite restaurants when we go home. One is La Tropicana Cafe in Ybor City, where we have enjoyed the Devil Crabs and Spanish Bean Soup for many years. This recipe is my version of the soup. Please enjoy. SALUD, Lolly

Number Of Ingredients 9

2 can(s) garbanzo beans aka chick peas (drained & rinsed)
2 large white potatoes (peeled & chopped)
1 large yellow or white onion (peeled & chopped)
1/2 lb slice your favorite cooked ham (chopped)
1 pkg 5.5 oz dry spanish dry chorizos (sliced thin)
2 large cloves of fresh garlic (minced)
1 pkg spanish seasoning (vigo's spanish flavoring)
8 c water
4 tsp tone's chicken base or chicken broth to equal liquid

Steps:

  • 1. You will need a large Saute Pan with Lid.
  • 2. Coat pan with Olive Oil, about 2 Tablespoons.
  • 3. Add chopped potatoes, chopped onion and minced garlic. Saute till soft.
  • 4. Add drained and rinsed beans, chopped ham, sliced chorizos, chicken broth and spanish seasoning.
  • 5. Cover and Simmer all together for 15 minutes, stirring occasionally.
  • 6. Let it rest for the flavors to blend. You will need NO salt if you use chicken base and spanish seasoning. I do add fresh ground Pepper Corn Medley before serving.
  • 7. This is best served with fresh Cuban Bread or French Bread if Cuban is not available. SALUD and HAPPY DAYS. ENJOY.
