1/3 cup honey, warmed
1 cup pecans
1 tablespoon sugar

Steps:

  • Preheat oven to 350°F.
  • Stir together honey and pecans, tossing to coat well. Spread pecans in 1 layer in a shallow baking pan and sprinkle with sugar. Bake in middle of oven 15 minutes, then stir and bake 5 minutes more.
  • Transfer while still warm to a sheet of parchment paper or foil and, working quickly, separate pecans with a fork. Cool completely (about 1 hour) and remove nuts from parchment, breaking up any large pieces.

2 lb. beets (about 10 small), washed, trimmed with 1-inch stems intact
2/3 cup pecan halves
3 Tbsp. honey
1/4 cup olive oil
2 Tbsp. orange juice
1/8 tsp. ground black pepper

Steps:

  • Heat oven to 400°F.
  • Cover baking sheet with foil; spray foil with cooking spray. Place beets on prepared baking sheet. Bake 1 hour or until tender. Remove from oven; cool slightly.
  • Meanwhile, combine nuts and honey in small skillet; cook on medium-high heat 4 to 6 min. or until mixture is simmering and foamy, stirring constantly. Immediately spread onto baking sheet sprayed with cooking spray; separate slightly with fork. Set aside to cool. Mix oil, juice and pepper; set aside.

1/2 stick (1/4 cup) unsalted butter, melted, plus additional for brushing pan
3/4 cup pecans, toasted and cooled
1/4 cup cake flour (not self-rising) plus additional for dusting
1 tablespoon unsweetened cocoa powder plus additional for dusting
1 1/2 teaspoons ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon salt
5 large eggs, separated
1/3 cup packed dark brown sugar
1/3 cup unsulfured molasses
For filling and topping:
1 1/4 cups heavy cream
1 tablespoon granulated sugar plus additional for sprinkling
1/2 cup chopped crystallized ginger

Steps:

  • Make cake layer:
  • Preheat oven to 350°F. Line bottom and sides of a 15- by 10- by 1-inch jelly-roll pan with foil, dull side up, and brush with melted butter. Dust pan with flour, knocking out excess.
  • Finely grind pecans with cake flour, cocoa, spices, and salt in a food processor. Beat together yolks, brown sugar, and molasses with an electric mixer at high speed until mixture is very thick and pale brown and forms a ribbon when beater is lifted, about 2 minutes with a standing model and 5 minutes with a hand-held.
  • Fold in pecan mixture gently but thoroughly. Transfer 1 cup batter to another bowl and fold in 1/4 cup melted butter, then fold butter mixture into remaining batter gently but thoroughly.
  • Beat whites with cleaned beaters in another bowl until they just hold soft peaks (do not overbeat). Stir one fourth of whites into batter to lighten, then fold in remaining whites gently but thoroughly.
  • Spread batter evenly in jelly-roll pan and bake in middle of oven until set and firm to the touch, about 12 minutes. Cool in pan on a rack and cover with plastic wrap.
  • Make filling:
  • Beat cream with sugar until it just holds stiff peaks, then fold in 6 tablespoons crystallized ginger.
  • Assemble roulade:
  • Put an 18-inch length of foil on a work surface and sprinkle with some sugar. Invert cake onto foil sheet and gently peel off foil from top. Spoon three fourths of whipped cream over cake, leaving a 1/2-inch border around edges.
  • Beginning with a short side and using foil as an aid, roll up cake, jelly-roll fashion, and transfer, seam side down, to a platter.
  • Just before serving, spoon remaining whipped cream on top of roulade and sprinkle with honey-glazed pecans and remaining crystallized ginger.

2 tbsp canola oil, divided
1/4 tsp salt, divided
1 tbsp butter
2 lb carrots, halved lengthwise and cut diagonally into 1/4" thick slices
1/2 tsp chili powder
2 tbsp honey

Steps:

  • 1. Heat oven to 375°F. Toss pecans on rimmed baking sheet with 1 tablespoon of the oil and 1/8 teaspoon of the salt. Toast in oven about 5 minutes. 2. Warm butter and remaining 1 tablespoon oil in large nonstick skillet over medium-high heat. Add carrots, cover, and cook 12 minutes over medium heat, stirring occasionally. 3. Stir in chili powder and remaining 1/4 teaspoon salt. Cover and cook until carrots are tender, about 1 minute. Off heat, stir in honey. Season to taste with salt and freshly ground black pepper and serve with pecans sprinkled on top.

1/2 c. broken pecans
1 T. honey
1/2 teas. coarse salt
pepper to taste
3 T. Honey
3 T. Red Wine Vinegar
1/2 coarse salt
1 large ripe pear
4 cups salad greens or spinach
2 slices bacon, crisp cooked
4 ounces Stilton cheese cut in small cubes or crumbled (about 1 cup)

Steps:

  • To make the honey-glazed pecans, tear off a 10-inch sheet of aluminum foil. Place the nuts in a small skillet and heat over medium heat, stirring, until hot. Decrease the heat to low and drizzle with the honey. Cook, stirring and adjusting the heat as needed to boil the honey. Cook for 2 to 3 minutes, until the honey has coated the nuts and they begin to caramelize. Spread the nuts on the foil. Sprinkle with the salt and a grinding of black pepper. Set aside to cool. To make the dressing, whisk the honey, vinegar, and salt in a large bowl until well blended. Place the sliced pears in a separate bowl and add 2 tablespoons of the dressing. Reserve the remaining dressing for the greens. Add the salad greens to the large bowl with the remaining dressing and toss to coat. Spread the dressed salad greens on a serving platter or in a large shallow bowl. Top with the crumbled bacon and the Stilton. Arrange the pears around the edges and pour any dressing left in the bowl over the top of the salad. Break the pecans into pieces and use to garnish the salad. Variation: Instead of using bacon, substitute four slices of prosciutto, cut into 1-inch pieces. Have ready a strainer set over a heatproof bowl. Heat ¼ inch of olive oil in a small skillet until hot enough to sizzle a piece of the prosciutto. Add the remaining prosciutto and cook, stirring, over medium heat for about 30 seconds, or until it is crisped and "frizzled." Pour the contents of the skillet into the strainer. Reserve the oil for another use. Sprinkle the prosciutto over the salad.
