What a cool burger! This is a real twist from what we are used to in North America! The beets and the capers add an awesome taste. You can enjoy this on its own or use a bun. I got this from the internet. Enjoy!

1 lb ground beef
1 egg
1/2 cup mashed potatoes, cold
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup pickled beet, minced
2 tablespoons onions, minced
2 tablespoons capers
4 fried eggs (optional)

Steps:

  • Mix beef, egg, potatoes, salt and pepper. Stir in remaining ingredients. Shape mixture into 4 patties, each about 1 inch thick.
  • Grill on the barbecue or set oven to low broil or 550°F Broil patties with tops about 4 inches from heat until desired doneness, 6 to 8 minutes on each side for medium.
  • Top each patty with fried egg if desired.

1 egg, beaten
1 cup sour cream
1 cup soft breadcrumbs
1/2 cup finely chopped onion
1/2 teaspoon dry mustard
1/2 teaspoon ground mace
1 teaspoon salt
1 lb ground beef
1/2 lb ground pork
8 kaiser rolls, split and toasted
lettuce leaf

Steps:

  • In a bowl combine egg and ½ cup sour cream.
  • Stir in bread crumbs, onion, mustard, mace and salt.
  • Add ground meats.
  • Gently mix well.
  • Shape into 8 patties each ½ inch thick.
  • In large skillet brown slowly on both sides.
  • Cover.
  • Continue cooking over low heat for 15 minutes.
  • To serve place patties on toasted rolls and spread with remaining sour cream,.
  • Top with lettuce and other half of roll.

1 lb lean ground beef
1 1/2 teaspoons salt
1/2 teaspoon fresh ground pepper
3 egg yolks
3 tablespoons beet juice, pickled
1/4 cup water
3 tablespoons pickled beets, chopped
3 tablespoons pickles, chopped
3 tablespoons onions, finely chopped
2 tablespoons capers
2 tablespoons butter

Steps:

  • Put ground beef in bowl.
  • Add salt and pepper.
  • Add egg yolks and mix.
  • Add beet juice and water, a small amount at a time. Mixture will be very moist.
  • Stir in beets, pickles, onion, capers.
  • Shape into 4 patties.
  • Score tops of patties.
  • With spatula, slide patties into hot butter in a large frying pan.
  • Use medium heat to cook to desired doneness.
  • Serve with mashed potatoes and green salad.

The original hamburger, these are served like a flattened meatball with some steamed string beans and salad. I also like to use this recipe to make Swedish meatballs (but omit the paprika). My Aunt in Hamburg, Germany taught me this recipe and I've been making them ever since. Serve with steamed string beans and tossed salad. Or serve on a Kaiser roll with lettuce, tomato, pickled cucumbers, finely sliced deep fried onions and curry ketchup.

1 Kaiser roll
⅔ pound ground beef
⅓ pound ground pork
1 onion, finely chopped
¼ cup chopped fresh parsley
1 egg
1 teaspoon Hungarian hot paprika
salt and ground black pepper to taste

Steps:

  • Soak Kaiser roll in a bowl of water for 10 minutes. Drain, squeezing out excess water, and crumble into a large bowl.
  • Mix crumbled roll with ground beef, ground pork, onion, parsley, egg, paprika, salt, and black pepper until well blended. Shape meat into large flattened meatballs.
  • Heat a large nonstick skillet over medium heat; fry meatballs until browned and no longer pink in the center, about 5 minutes per side.
