1/2 cup packed brown sugar
1/2 cup soy sauce
2 garlic cloves, minced
1/4 teaspoon pepper
4 bone-in pork loin chops (1 inch thick and 8 ounces each)

Steps:

  • In a bowl or shallow dish, combine the brown sugar, soy sauce, garlic and pepper. Add pork chops and turn to coat. Cover and refrigerate for 8 hours or overnight., Drain pork chops, discarding marinade. Grill chops on greased grill rack, covered, over medium heat or broil 4-5 in. from the heat for 4-5 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 145°; medium, 160°). Let meat stand for 5 minutes before serving.

1 canned chipotle chile in adobo, chopped
2 teaspoons oregano
2 garlic cloves, chopped
1/4 cup olive oil
2/3 cup lime juice (fresh!)
1 tablespoon fresh cilantro, chopped
1/2 teaspoon salt

Steps:

  • Place chops in large self-sealing plastic bag; combine remaining ingredients in a small bowl and pour over chops.
  • Seal bag and refrigerate for up to 24 hours.
  • Remove chops from marinade (discard marinade).
  • Grill over medium-hot coals for a totoal of 12-15 mins, turning half-wayt thru, or until done.

JALAPEñO-MARINATED GRILLED PORK CHOPS

Along with adding some extra smoky-char flavor to the dish, grilling the jalapeños mellows their spiciness. If you want to up the heat, just leave them raw.

1/2 cup plus 3 Tbsp. extra-virgin olive oil, divided, plus more for grill
4 bone-in pork rib chops (about 10 oz. each)
Kosher salt, freshly ground pepper
2 tsp. coriander seeds
1/4 cup apple cider vinegar
1 tsp. sugar
2 large jalapeños
1/4 medium white onion, very thinly sliced

Steps:

  • Prepare a grill for medium-high heat; lightly oil grate. Pat pork chops dry and season generously all over with salt and pepper. Place on a rimmed baking sheet and let sit at room temperature at least 30 minutes and up to 1 hour.
  • Meanwhile, toast coriander seeds in a dry small skillet over medium heat, tossing often, until golden brown and fragrant, about 2 minutes. Transfer seeds to a cutting board and let cool. Using a flat-bottomed mug or a heavy skillet, lightly crush. Place in a small bowl and add vinegar, sugar, and 1/2 cup oil. Season with salt and pepper and whisk until sugar and salt are dissolved. Set marinade aside.
  • Toss jalapeños and 1 Tbsp. oil in a small bowl to coat; season with salt and pepper. Pat pork chops dry again (the salt will have drawn out more moisture) and rub with remaining 2 Tbsp. oil. Grill jalapeños, turning often, until softened and blackened in spots, about 5 minutes. Transfer to a cutting board. Grill pork chops, turning every 2 minutes or so, until cooked through but still medium-rare closest to the bone (an instant-read thermometer inserted near the bone should register 145°F), 8-12 minutes. Transfer to cutting board and let rest 10-15 minutes.
  • Cut pork along the bone to remove meat in one piece; slice 1/2" thick and transfer to a rimmed platter. Slice jalapeños crosswise into rounds and scatter over pork. Pour reserved marinade over and let sit at least 15 minutes and up to 1 hour before serving. To serve, scatter onion over.

GRILLED BOURBON-MARINATED PORK CHOPS OR PORK TENDERLOINS

Plan ahead the pork needs to marinade for a minimum of 12 hours. Use this marinade for 2 pork tenderloins or 6-8 pork chops. You can reduce the bourbon to 1/3 cup but 1/2 cup is better!

3/4 cup low sodium soy sauce (use only low sodium)
1/2 cup Bourbon
1/4 cup Worcestershire sauce
1/4 cup water
1/4 cup vegetable oil
2 tablespoons fresh minced garlic
3 tablespoons brown sugar
2 tablespoons black pepper
1 teaspoon fresh minced gingerroot (or use 1/2 teaspoon dry ginger powder)

Steps:

  • In a bowl whisk together the marinade ingredients; place in a large zip-loc plastic bag.
  • Add in the pork chops or 2 pork tenderloins; seal the bag.
  • Turn to coat with the marinade.
  • Refrigerate for a minimum of 12 hours.
  • Set grill to high heat (about 400°F).
  • Remove the pork and discard the marinade.
  • Place on grill.
  • For pork chops cook for about 15 minutes on each side, depending on how thick your chops are.
  • For pork tenderloins, cook for about 25 minutes turning occasionally or until the pork is cooked; tent with foil and let sit for about 10 minutes before slicing.

six 1-inch-thick center-cut loin or shoulder pork chops
2 pounds small boiling potatoes, scrubbed
a 6-ounce can frozen apple juice concentrate, thawed
1/3 cup apple jelly
1/4 cup vegetable oil
3 tablespoons cider vinegar
2 tablespoons Worcestershire sauce
2 tablespoons Dijon-style mustard
2 teaspoons dried rosemary
1 teaspoon crumbled dried sage
2 teaspoon salt
1 teaspoon freshly ground black pepper

Steps:

  • Arrange the pork chops in one layer in a large shallow dish. In a kettle combine the potatoes with enough water to cover them by 1 inch, simmer them for 10 minutes, or until they are just tender, and drain them. In a blender blend together well the apple juice concentrate, the jelly, the oil, the vinegar, the Worcestershire sauce, the mustard, the rosemary, the sage, the salt and the pepper. Halve the potatoes and in a bowl toss them gently with 1/4 cup of the apple and herb marinade. Pour the remaining marinade over the chops, coating them thoroughly, and let the chops and the potatoes marinate separately, covered and chilled, overnight.
  • Grill the chops, the marinade discarded, on an oiled rack set 5 to 6 inches over glowing coals for 7 to 8 minutes on each side, or until they are just cooked through. Grill the potatoes, cut sides down, for 10 minutes, or until they are golden brown.

1/4 cup soy sauce
3/4 teaspoon garlic powder
3/4 teaspoon ground ginger

4 thick cut pork loin chops, trimmed of excess fat
1/4 cup extra virgin olive oil
1 tablespoon balsamic vinegar

This is one of my favorite ways to do pork chops in the summer! Simple meal that takes no time at all to cook!

1 c pineapple juice
2-3 clove garlic, minced
2 Tbsp minced fresh gingerroot
1/4 c soy sauce
1/4 c canola oil
1 tsp dry mustard
8 (1/2-inch) boneless pork loin chops
vegetable cooking spray

Steps:

  • 1. Place pork in a gallon size zip lock bag or shallow dish with a lid that seals air tight.
  • 2. Mix together remaining ingredients except cooking spray and pour over pork. Seal bag/container. Turn to fully coat chops in marinade.
  • 3. Marinate 24 hours in refrigerator, turning occasionally.
  • 4. Coat grill rack with cooking spray, remove tenderloins from marinade; discard remaining marinade. Grill over medium coals about 7 minutes per side until done.

1/2 cup honey
2 large garlic cloves, forced through a garlic press
2 tablespoons grated peeled fresh gingerroot

2 dashes of Worcestershire sauce
1/2 cup golden or dark rum
twelve 1-inch-thick pork chops
a 12-ounce jar apple jelly
3 tablespoons lemon juice
freshly grated nutmeg to taste

Steps:

  • In a bowl combine the apple juice, 1/2 cup of the soy sauce, the honey, the garlic, the gingerroot, the mustard, the Worcestershire sauce, and the rum. In a shallow dish arrange the pork chops in one layer, pour the marinade over them, and let them marinate, covered and chilled, turning them occasionally, overnight. Drain the marinade into a saucepan and add the jelly and the remaining 1/4 cup soy sauce. Bring the sauce to a boil, boil it until it is reduced to about 1 1/2 cups, and stir in the lemon juice and the nutmeg. Grill the pork chops on an oiled rack set about 6 inches over glowing coals, turning them and basting them with the sauce every 5 minutes, for a total 20 minutes, or until they are just cooked through. Serve the chops with the sauce.

1/2 cup olive oil
3 tablespoons honey
1 tablespoon fresh rosemary, chopped
20 ounces lean boneless pork chops, visible fat removed

4 peaches, halved & pitted
fresh thyme leave (to garnish)

Steps:

  • In a small bowl, whisk together vinegar, oil, honey and rosemary.
  • Reserve 2 Tbs. and add the rest to a 1-gallon zip-top bag.
  • Add pork to bag and refrigerate for 1 hour, turning occasionally.
  • Preheat broiler to high or coat a grill pan with cooking spray and heat to medium-high over stove.
  • Remove pork from fridge, discard marinating liquid and season pork with salt and pepper.
  • Broil pork or cook in grill pan until pork is opaque throughout and feels firm to the touch. About 5-6 minutes per side.
  • Meanwhile, cook peaches under broiler or in a grill pan over medium heat until tender and juicy, 3-5 minutes.
  • Transfer to plate, season with salt and pepper and brush with reserved marinade.
  • To serve, place a pork chop on each of 4 plates and top with 2 peach halves. Garnish with thyme leaves.

1 (6 ounce) can unsweetened pineapple juice
2 tablespoons reduced sodium soy sauce

  • Trim excess fat from chops.
  • Place chops in a shallow baking dish.
  • Combine juice, soy sauce, and garlic, stirring well, pour over chops.

1/2 cup olive oil

8 Pork Chops, the ones we used were approximately ½ inch thick
1 Cup Cranberry Juice, we've used apple juice before; we preferred the cranberry juice
½ Cup Soy Sauce
¼ Cup of Heated Honey, I heated it to get a thinner consistency in order for it to mix well with the other ingredients
2 Tablespoons Olive Oil
1 Tablespoon Lime Juice
1 Tablespoon Lemon Juice
1 Tablespoon Worcestershire Sauce
4 -5 dashes of Tabasco Sauce
1 Tablespoon Onion Powder
1 Tablespoon Garlic Powder
1 Teaspoon Ground Black Pepper
No Salt, the soy sauce is salty enough

Steps:

  • 1. Rinse and pat dry pork chops. 2. In a separate bowl, mix all other ingredients, stir until melded together. 3. Combine marinate and pork chips in large bowl/container, I used a plastic container with a lid in order to shake without spilling; I'm very messy whenever I cook. 4. Marinate for approximately 1hour, shaking or stirring occasionally for equal coating. Any longer and the honey will coagulate again. Cooking Directions: 1. Preheat grill to highest setting, we're going to cook the pork chops with high heat and fast time; just like a steak. 2. Grill pork chops for approximately 15 minutes; don't turn until sear marks are present and the pork releases from the grill grate. 3. After the first turn, brush marinate onto the pork chops to keep moist. 4. When pork chops are done, place in aluminum foil and let rest for 5 minutes. 5. Enjoy
