JAPANESE DYNAMITE MUSSELS

1 dozen raw mussels
1/2 cup Kewpie mayonnaise
1 tsp Sriracha
1 tsp soy sauce
1 tsp lemon juice
2 tbsp masago (smelt roe)
1 Stalk scallions (only the green part)

Steps:

  • Rinse the mussels under cold water. Remove meat from its shell and roughly chop.
  • Mix the meat in a bowl with Kewpie, sriracha, soy sauce, lemon juice, 1 tablespoon of masago and scallions (reserve a bit of massago and scallions for garnish)
  • Spoon the mixture back into the shells.
  • Line a baking tray with foil and place the mussels on the tray.
  • Broil at 450 degrees (a toaster oven works great for this) for about 10 minutes, until the tops are golden.
  • Garnish with masago and scallions.

Don't let the recipe title fool you..... this is a creamy, elegant way to serve mussels. The flavor combination of cream, mustard and saffon is great. This recipe will easily double, triple, and quadruple. Mussels make a perfect appetizer served with crusty bread for sopping up the sauce or as a light meal by themsleves with a small salad, crusty bread and some wine. A good rule of thumb for mussels is 1/2 lb per person as an appetizer, 1 to 1 1/2 lbs per person as an entree'. Preparation time includes cleaning the mussels.

1 small shallot, minced
1/4 cup dry white wine
1 lb fresh mussels, cleaned
1 tablespoon Dijon mustard, strong
1/3 cup heavy cream
1/4 teaspoon saffron
salt & fresh ground pepper

Steps:

  • Place shallots and wine in a large, heavy sauce pan (or cast iron, french oven for larger quanities of mussels) and bring to a boil over high heat.
  • Add mussels to pan and steam, covered, for about 3 minutes or until the shells open.
  • Remove mussels from the sauce pan, draining liquid back into the pot.
  • Discard any mussles that do not open.
  • Divide mussels among individual serving bowls and set a side.
  • Strain cooking liquid and return to sauce pan.
  • Add cream, saffron, salt, pepper and reduce until the sauce just starts to thicken.
  • Pour sauce over mussels in the serving bowls and serve.

2 bunches cilantro, leaves and tender stems, coarsely chopped, about 2 cups
1 2-inch piece fresh ginger, peeled and thickly sliced
2 garlic cloves
1 or 2 serrano chiles, split lengthwise
1/2 cup grated unsweetened coconut, fresh, dried or frozen
1 teaspoon Vietnamese fish sauce
1/2 teaspoon salt
2 teaspoons brown sugar
1 4-inch stick fresh lemon grass, sliced 1/4-inch thick
4 pounds mussels
2 tablespoons unsalted butter
1 cup chicken broth, vegetable broth or water
3 or 4 scallions, thinly sliced

Steps:

  • To make a green curry paste, put cilantro, ginger, garlic, chiles, coconut, fish sauce, salt, sugar and lemon grass in a blender or food processor. Blend to a coarse paste, adding a little ice water if necessary.
  • Rinse the mussels under cold water and remove the beards. Discard any mussels with broken shells, as well as any that are not tightly closed.
  • Melt the butter in a heavy-bottomed soup pot over a medium-high flame. Add the mussels and stir well to coat. Raise the heat to high, add the broth or water, and put on the lid. Cook for 2 minutes.
  • Add 1/2 cup of the green curry paste, stir well, and continue cooking for 4 to 5 minutes, until all of the mussels have opened. Sprinkle with the scallions.
  • Bring the pot to the table and serve in wide soup bowls, ladling some of the broth over the mussels, along with a squeeze of lime juice. Pass the remaining green curry paste separately, if desired.

2 tablespoons salted butter
1 tablespoon olive oil
6 cloves garlic, grated
1 white onion, finely chopped
Kosher salt and freshly ground black pepper
1/2 cup full-fat plain Greek yogurt
4 cups vegetable, chicken or seafood stock
Zest and juice of 1 lemon
2 pounds PEI mussels, cleaned
1 tablespoon roughly chopped fresh cilantro
1 tablespoon roughly chopped fresh dill
1 tablespoon roughly chopped fresh mint
1 tablespoon roughly chopped fresh Italian or curly parsley
1 tablespoon roughly chopped fresh tarragon
2 scallions, white and green parts, roughly chopped
Crusty bread, to serve

Steps:

  • In a large pot, melt the butter in the oil over medium heat. Add the garlic and onions and season with a pinch of salt and a few grinds of pepper. Sauté until softened, about 5 minutes. Add the yogurt and whisk until smooth. Raise the heat to medium high and slowly whisk in the stock and lemon juice. Bring to a simmer. Immediately add the mussels and cover. Cook until the mussels have opened up, 6 to 8 minutes. Discard any mussels that do not open.
  • While the mussels are cooking, pile the cilantro, dill, mint, parsley, tarragon, scallions and lemon zest on a cutting board and roughly chop a little more.
  • Give the mussels a stir, add the herb-zest mixture and stir again. Serve hot with crusty bread to dunk into the cooking liquid.

1/2 teaspoon saffron threads
2/3 cup good mayonnaise, such as Hellmann's
1 teaspoon grated lemon zest
1 tablespoon freshly squeezed lemon juice
1 teaspoon Dijon mustard
Kosher salt and freshly ground black pepper
3/4 teaspoon fleur de sel or sea salt
1 1/2 pounds mussels, cleaned
1/3 cup dry white wine

Steps:

  • For the mayonnaise, soak the saffron in 1 tablespoon of hot water in a small bowl for 5 minutes. Whisk in the mayonnaise, lemon zest, lemon juice, mustard, 1/2 teaspoon kosher salt, and 1/4 teaspoon pepper and refrigerate until ready to use.
  • For the mussels, combine the fleur de sel and 1/2 teaspoon pepper and set aside. Heat a large, dry (12-inch) cast iron skillet over high heat for 4 to 5 minutes, until very hot. Add the mussels in a single layer and cook them for one minute, until they start to open. Add the wine and continue cooking for 2 to 3 minutes, until the mussels are fully opened and just cooked. (Discard any that don't open.) Off the heat, sprinkle the mussels generously with the salt and pepper mixture. Serve hot from the skillet with individual bowls of saffron mayonnaise for dipping.

48 large green mussels
1 cup butter
1/2 cup dry white wine
1/2 cup fresh parsley
6 fresh garlic cloves
1 large shallot
1/8 cup lemon juice
1/8 teaspoon salt
1/8 teaspoon ground black pepper
1/2 cup water

Steps:

  • Scrub the mussels under the faucet and remove the beards and then set aside.
  • In a 6 quart saucepot place butter, wine, lemon juice and water and bring to a boil over high heat.
  • Add the mussels and return to a boil.
  • Reduce heat to low and simmer, covered, 3 minutes or until mussels are opened.
  • With a slotted spoon remove mussels to 4 deep serving dishes and set aside.
  • Place the liquid into a blender or food processor and add the parsley, garlic cloves, shallot, salt and pepper and blend well.
  • Pour the sauce over the mussels and serve with a crusty bread, so that you can dip the bread into the sauce.

2 lbs mussels, debearded
4 cloves garlic, minced
1/4 cup chopped fresh parsley
3 tablespoons extra virgin olive oil
1/4 cup water
cornstarch

Steps:

  • In large heavy-bottomed pot combine the garlic, parsley and olive oil over medium-high heat and sautee until garlic is almost brown.
  • Add water and mussels, cover and steam until mussels open.
  • Remove mussels and add cornstarch to thicken broth.

1 (15- to 16-ounce) package frozen french fries
1 small onion
2 garlic cloves, forced through a press
3 tablespoons unsalted butter
2 teaspoons dry mustard
2 teaspoons water
1/2 cup mayonnaise
1 cup dry white wine
2 pounds cultivated mussels, rinsed
2 tablespoons chopped fresh flat-leaf parsley
Crusty bread, preferably a baguette
Special equipment: Mandoline

Steps:

  • Cook the fries according to package instructions and keep warm in the oven if necessary.
  • Meanwhile, cut the onion into very thin slices with the slicer, then cook with garlic and a pinch of salt in the butter in a wide heavy medium pot over medium-high heat, covered, stirring occasionally, until pale golden.
  • While the onion cooks, whisk together the mustard and water until smooth, then whisk in the mayonnaise and about 1/4 teaspoon pepper.
  • Add the wine to the onion and briskly simmer, covered, stirring occasionally, until the onion is almost tender, about 5 minutes. Add the mussels and cook, covered, stirring occasionally, until mussels are just open wide, 4 to 6 minutes, checking frequently after 4 minutes and transferring as cooked to a bowl. (Discard any mussels that remain unopened.)
  • Stir the parsley into the cooking liquid and season with salt. Pour liquid over mussels, then serve with fries and mustard mayonnaise.

40 (about 3 pounds) New Zealand green mussels or other large mussels
1 cup white wine
3 sprigs thyme
3/4 cup homemade mayonnaise
1 tablespoon lemon juice
1 1/4 teaspoons hot Chinese-style mustard powder
1 roasted red bell pepper, skinned, seeded and chopped
Kosher salt to taste
Fresh thyme leaves for garnish

Steps:

  • Scrub the mussels, and use a paring knife to remove any beards that protrude from the shells. Place the mussels in a large bowl of very cold water to soak briefly.
  • In a large kettle, bring the wine to a boil and add the thyme sprigs. Drain the mussels and add them to the kettle. Cover and cook, stirring once or twice, until they open, about 5 minutes. (Discard any that do not open.) Set aside to cool.
  • Meanwhile, in the container of a blender, combine the mayonnaise, lemon juice, mustard powder and roasted pepper. Blend until smooth. Scrape into a bowl, season to taste with salt and refrigerate until ready to use.
  • Break the mussel shells apart, discarding the tops and leaving the meat attached to the bottoms. Divide among 6 plates and top each mussel with 1/2 teaspoon of the mustard sauce. Sprinkle each with a pinch of thyme leaves and serve.
