1 1/2 cups chopped onions
2 -3 tablespoons finely chopped fresh ginger
3 -4 garlic cloves, minced
4 (15 ounce) cans great northern beans, rinsed and drained
1/2 cup packed light brown sugar
1 (6 ounce) can tomato sauce
1/2 cup light molasses
1 teaspoon dry mustard
1 teaspoon ground ginger
1 teaspoon dried thyme
1/2 teaspoon ground cinnamon
1/2 teaspoon allspice
2 bay leaves
pepper
1/2 cup coarsely ground gingersnap crumbs

Steps:

  • Combine all ingredients except pepper and gingersnap crumbs in slow cooker. Season to taste with pepper.
  • Cover and cook on low until thickened to desired consistency, about 6 hours, mixing in gingersnap crumbs during last hour.
  • Discard bay leaves before serving.

Baked beans made from scratch in the slow cooker. It takes a lot of time to cook, but not a lot of work. Use Yellow Eye beans if they are available in your area, and grade A amber maple syrup if you can.

1 ½ pounds dry great Northern beans
1 large onion, cut into wedges
4 ounces salt pork, diced
¾ cup real maple syrup
¼ cup molasses
¼ cup brown sugar
1 teaspoon ground ginger
1 teaspoon mustard powder
½ teaspoon salt
¼ teaspoon ground black pepper
2 cups boiling water

Steps:

  • Soak the dried beans in a large pot of water overnight, then drain. Refill the pot with water, and bring to a boil. Simmer until beans are tender, about 1 hour.
  • While the beans are cooking, mix together the maple syrup, molasses, brown sugar, ginger, mustard powder, salt, pepper and water. Set aside.
  • Place onion wedges into the bottom of a 3 quart or larger slow cooker. Place salt pork cubes over the onion. Drain the beans, and transfer to the slow cooker. Pour the maple syrup mixture over the beans. If there is not enough liquid to cover the beans, add a little more hot water.
  • Cover, and cook on the Low setting for 10 to 12 hours, or cook on High for 5 to 6 hours. If cooking the beans on High, you will want to check occasionally in case they need a little bit more water. If the beans are too juicy for your liking, leave the lid off for the last 30 minutes to steam off some of the liquid.

Boston Baked Beans image

A wonderful old-fashioned baked bean flavor. This recipe has served by family for 29 years and originally came from my mother-in-law. It tastes great served with fresh cornbread or biscuits and honey. Although you need to allow time for soaking and simmering the beans, this recipe is still quite easy.

2 cups navy beans
½ pound bacon
1 onion, finely diced
3 tablespoons molasses
2 teaspoons salt
¼ teaspoon ground black pepper
¼ teaspoon dry mustard
½ cup ketchup
1 tablespoon Worcestershire sauce
¼ cup brown sugar

Steps:

  • Soak beans overnight in cold water. Simmer the beans in the same water until tender, approximately 1 to 2 hours. Drain and reserve the liquid.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Arrange the beans in a 2 quart bean pot or casserole dish by placing a portion of the beans in the bottom of dish, and layering them with bacon and onion.
  • In a saucepan, combine molasses, salt, pepper, dry mustard, ketchup, Worcestershire sauce and brown sugar. Bring the mixture to a boil and pour over beans. Pour in just enough of the reserved bean water to cover the beans. Cover the dish with a lid or aluminum foil.
  • Bake for 3 to 4 hours in the preheated oven, until beans are tender. Remove the lid about halfway through cooking, and add more liquid if necessary to prevent the beans from getting too dry.

4 slices thick-cut bacon, cut crosswise into 1-inch pieces
1 1/2 cups chopped onion
1/3 cup minced peeled fresh ginger
2 (28-ounce) cans original flavor baked beans
1/2 cup mild-flavored (light) molasses
2 tablespoons plus 2 teaspoons apple cider vinegar or distilled white vinegar

Steps:

  • Set oven rack in lower middle position; preheat to 325°F. Heat heavy large pot over medium-high heat. Add bacon; cook until crisp, stirring often. Transfer to paper towels to drain. Pour off all but 2 tablespoons drippings from pot. Add onion; sauté until beginning to soften, about 5 minutes. Add ginger; sauté 1 minute. Stir in beans with juice, molasses, vinegar, and bacon; bring to simmer. Transfer to 11x7x2-inch glass baking dish. DO AHEAD Can be made 1 day ahead. Cover and chill. Bake until top is dark brown and bubbling, about 2 hours. Let stand 15 minutes; serve.

1 pound dry red kidney beans
2 quarts water
1 large yellow onion, cut in eighths
1 bay leaf
6 whole black peppercorns
3/4 cup medium amber pure maple syrup
1/2 cup light brown sugar, lightly packed
1/2 cup ketchup
1 tablespoon Chinese chili paste
1 tablespoon grated fresh ginger
1 teaspoon kosher salt
5 ounces thick-cut smoked bacon, cubed

Steps:

  • Place the beans in a large bowl and cover with cold water by 1-inch and cover with plastic wrap. Refrigerate overnight. Drain and rinse the beans and then drain again.
  • Place the beans in large pot with 2 quarts water, the onion, bay leaf, and peppercorns. Bring to a boil, then lower the heat and simmer for about 50 minutes, or until tender. A good test is to scoop up several beans in a spoon and blow on them: if the skin starts to peel off, they're done. Drain the beans, reserving the cooking liquid.
  • Preheat the oven to 225 degrees F.
  • In a small saucepan, whisk together the maple syrup, brown sugar, ketchup, chili paste, ginger, salt, and 1 1/2 cups of the cooking liquid, still reserving the remaining liquid. Bring to a simmer and cook over medium heat for 6 minutes.
  • Transfer the beans to a medium Dutch oven or a bean pot. Push half the bacon into the beans and place the rest on the top. Pour the maple syrup sauce over the beans. Place the lid on top and bake for 6 to 8 hours. Check occasionally; if the beans are too dry, add 1/2 cup more of the cooking liquid. If you like, you can remove the lid for the last 30 minutes to thicken the sauce. Discard the bay leaf. Serve hot.

The best thing is it is easy and quick, I get the Ginger Snaps at the dollar store, and that makes for an economical side dish that taste...

3/4 c ginger snap cookies
1 small onion, chopped (microwave 3 minutes)
1/4 c brown sugar/or maple syrup
1 1/2 Tbsp liquid smoke
2 Tbsp yellow mustard
4 strips bacon, fried crisp & crumbled
2 can(s) 16 oz. pork n beans
1/4 c heinz catsup

Steps:

  • 1. PREHEAT OVEN TO 375 DEGREES F. Lightly grease a 1 1/2 quart casserole dish with butter or cooking spray. Mix ginger snaps, onions, brown sugar or maple syrup, bacon pork N Beans & catsup. Stir till well mixed. I also like adding green Bell peppers to my Baked Bean recipes for added flavor.
  • 2. Pour into prepared casserole dish. Bake for 30 minutes or until hot and bubbly. Serves 6-8.
  • 3. Note you can add a few extra slices of pre cooked sliced bacon on top if desired.
