Steps:
- Cut chicken in half lenghtwise.
- Place in large oven proof dish.
- Squeeze juice from the lemons over the chicken.
- Add the lemon to the dish along with garlic, rosemary, red pepper, salt and pepper.
- Marinate for 2 hours, turning chicken a few times.
- Preheat oven to 400 degrees.
- Roast chicken for 45 minutes.
- Can broil at the end for darker, crisp skin.
- Cut into serving pieces.
GARLIC AND ROSEMARY LEMON-ROASTED CHICKEN

- Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with foil.
- Roll the lemon and cut in half lengthwise. Slice one half into quarters and set the other half aside for baking and basting. Cut onion into 4 pieces; slice one piece and sprinkle on the prepared baking sheet. Set remaining onion pieces aside.
- Mix garlic salt, sage, turmeric, basil, rosemary, and pepper together until well combined; divide evenly into 2 bowls.
- Rinse chicken in cold water and dry off. Trim and discard excess fat and separate skin from meat. Stuff inside of the chicken with arugula, 4 lemon slices, 3 onion pieces, and garlic cloves. Tie the legs together with twine. Spread 2 tablespoons ghee underneath the skin and another 2 tablespoons ghee on top of the skin, all over the chicken.
- Add 2 tablespoon ghee and butter to one bowl of spices. Microwave for 45 seconds. Stir and spread underneath the skin. Microwave remaining 1 tablespoon ghee and brush on top of skin. Sprinkle remaining seasoning all over chicken and pat into the skin; do not rub. Lightly squeeze some of the remaining lemon half on top of chicken and place chicken, breast-side up, on the onion slices on the baking sheet.
- Bake in the preheated oven until no longer pink at the bone and the juices run clear, about 1 hour and 30 minutes, basting with juices and remaining lemon juice every 30 minutes. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read 165 degrees F (74 degrees C). Remove from the oven and let rest for 10 minutes before slicing, continuing to baste.

Steps:
- Place chopped rosemary in baking dish.
- Add olive oil, garlic, and lemon juice and stir well.
- Place chicken in mixture in dish, skin side down.
- Turn to coat with mixture.
- Cover and place in fridge for one hour.
- Preheat oven to 450 degrees.
- Bake chicken uncovered for 15 mins.
- Turn chicken pieces and add baby potatoes, turning potatoes to coat with juices in pan.
- Reduce heat to 375 degrees and bake for 25 mins.
- Remove from oven and remove potatoes from pan.
- Keep potatoes warm.
- Put chicken under broiler for a few minutes until nice and crispy.
- NOTE: Watch carefully while under broiler because juices and oil in pan will get very hot.
- Spoon pan juices onto chicken pieces and baby potatoes and serve.
ROASTED CHICKEN WITH ROSEMARY, LEMON AND GARLIC
Posting this for ZWT 2006 (Italian region) this is simple, not overly spiced, not overly complicated; just good homey Italian comfort food. Cook this with Baby Potatoes right in the pan and take care of the bulk of your meal all in one dish. Cook time includes refrigerator time.

- Chop the rosemary, and place it in a a large flat ovenproof dish with the olive oil, lemon juice, and garlic.
- Place the chicken quarters in this dish, and turn the pieces to coat with the mixture; cover with plastic wrap, and let sit in the refrigerator for one to two hours.
- Preheat the oven to 425 degrees F. Place the dish with the chicken into the oven, and cook for 15 minutes.
- Turn the chicken pieces, and add the potatoes if using into the pan with the chicken, coating them with the chicken's juices and salting and peppering the chicken and potatoes to your own taste.
- Reduce the heat to 375 degrees F., and cook an additional 20 to 30 minutes, or until the juices run clear when the chicken is pricked, and the potatoes are tender when pricked with a fork.
- Serve hot on a platter with the roasted baby potatoes, garnished with fresh rosemary sprigs.

ROSEMARY, GARLIC AND LEMON ROASTED CHICKEN WITH LEMON WHITE WINE SAUCE
This is a very moist and flavorful chicken. It is simple and most of the ingredients you always have on hand. The wine sauce is an added benefit! My family loved it!

- 1. Wash chicken and rub skin and cavity with olive oil. Sprinkle with salt and pepper inside and out.
- 2. Chop the cloves of garlic and make a paste using a chef's knife at an angle to grind the garlic against the salt until smooth.
- 3. Mix this paste with 2 tablespoon of chopped rosemary, 2 teaspoons lemon zest and enough olive oil and lemon juice to wet the ingredients, but not so much they float in the liquid.
- 4. Divide herb mixture in half and gently lift the skin of the chicken and rub flesh with the mixture, make sure to rub legs and back.
- 5. Rub the skin and cavity with the other half of the mixture.
- 6. Stuff the cavity with the lemons you squeezed to get juice and any rosemary you have left.
- 7. Chop the onions and place on the bottom of your roasting pan. Tie the chicken legs together and place it on top of the onions in roasting pan.
- 8. Pour enough white wine to cover the bottom of the roasting pan and add the lemon juice.
- 9. Roast chicken in oven at 400F for 20 minutes. Lower the temperature to 350F and roast until juices run clear, about 1 more hour.
- 10. Remove chicken from roasting pan and cover with foil. Allow chicken to rest at least 10 minutes before carving.
- 11. Strain onions from liquid and reserve liquid. In a pan, melt the butter and gradually add the flour make sure there are no lumps
- 12. Cook a few minutes and gradually add the reserved liquid while stirring constantly to avoid lumps. Bring to a boil until sauce thickens slightly. Adjust seasonings as needed.
- 13. Remove string and lemons from chicken cavity. Serve with sauce on the side.
ROASTED CHICKEN WITH GARLIC, ROSEMARY AND LEMON BUTTER
Steps:
- 1. Adjust oven rack to middle position; heat oven to 450 degrees. Line bottom of broiler pan with foil, place broiler pan rack on top; set aside. In small bowl, mix 1/2 teaspoon salt with garlic, rosemary, lemon zest, and butter until combined. Sprinkle underside of chicken liberally with salt and pepper. Following illustrations 1 through 3 below, gently loosen bottom portion of skin covering each breast. Using small spoon, place a quarter of softened butter under skin, directly on meat in center of each breast half. Using spoon, spread butter evenly over breast meat. Rub skin of each whole breast with 1 1/2 teaspoons oil and sprinkle liberally with pepper. Set chicken on roasting rack and then on rimmed baking sheet. 2. Roast until thickest part of breast registers 160 degrees on instant-read thermometer, 50 to 60 minutes. Transfer chicken to cutting board and let rest 5 minutes. To carve, follow illustrations 1 through 3 below. Serve immediately.
RACHAEL RAY'S GARLIC ROASTED CHICKEN WITH ROSEMARY AND LEMON
This is a quick and easy chicken receipe that can go as a main course with just about anything. I made a roux in a saucepan with butter and flour and garlic and added the pan drippings to it with the wine instead of leaving it in the oven it would take longer to thicken if let in oven.

- Arrange chicken in 9x13 baking dish. Add garlic, rosemary, evoo, lemon zest and grill seasoning and salt & pepper if you wish.
- Toss & coat chicken with all ingredients. Then place in oven. Roast 20 minutes.
- Add wine and lemon juice to the dish and combine with pan juices. Return to oven and turn oven off.
- Let stand 5 minutes longer and removen chicken from the oven.

PAN ROASTED CHICKEN WITH LEMON, GARLIC AND ROSEMARY

- The key to this dish is the preperation of the chicken. You have to SPATCHCOCK it. This basically means romoving the spine, simply get a knife or pair of butchers scissors and cut through the rib bones either side of the spine, keep this for later. Now lay the chicken down breast side up, ensure the legs and wings aren't caught under the carcass and simply push down to flatten the chicken out.
- Firstly pre-heat the oven to 200C. Take a large oven proof frying pan and place it on the hob at a high heat. Place you garlic cloves on your chopping board and squash them with the side of your knife. add the oil, squashed garlic cloves and the rosemary to the pan, whilst they are heating up slice the lemon in to 5 nice chucky slices then add these and the spine from the chicken to the pan.
- After 2 or 3 mins move everything in the pan to the sides and place the chicken in the pan breast side down and it should start to sizzle nicely. Now season the open side of the carcass with salt and pepper. After 7 or 8 mins check the chicken and see if it's satrting to brown. If so flip it over taking care not to pull the legs off and season this side.
- After another 10 mins or so pull out a couple of the slices of lemon and some rosemary and garlic and place on the top of the chicken. Now place the pan in the middle of the pre heated oven and leave to roast for about 30-40 mins.
- After this time check to make sure it's cooked all the way through by piercing the meat and squeezing the juices out, if they run clear it's cooked. Take the chicken out the pan and seperate the legs and wings from the body and divide the breast into 4. Now crush the lemon slices in the pan with the back of a fork and pour all the juices from the pan over the chicken. I serve this with some crusty bread and a Rocket and Parmesan salad.
