PERFECT PIE CRUST

- Cut the butter in 1/2 inch dice and return it to the refrigerator while you prepare the flour mixture. Place the flour, sugar and salt in the bowl of a food processor fitted with a steel blade and pulse a few times to mix. Add the butter and shortening. Pulse 8 to 12 times, until the butter is the size of peas. With the machine running, pour the ice water down the feed tube and pulse the machine until the dough begins to form a ball. Dump out onto a floured board and roll into a ball. Wrap in plastic wrap and refrigerate for 30 minutes.
- Cut the dough in half. Roll each piece on a well-floured board into a circle at least 1 inch larger than the pie pan, rolling from the center to the edge, turning and flouring the dough so it doesn't stick to the board. (You should see bits of butter in the dough.) Fold the dough in half, ease it into the pie pan without stretching at all and unfold to fit the pan. With a small sharp paring knife, cut the dough 1 inch larger around than the pan. Fold the edge under and crimp the edge with either your fingers or the tines of a fork.
BEST EVER PIE CRUST
You can double or half the recipe without any problem. This is a simple recipe and very tasty! It will be very flaky.

Steps:
- In a large bowl, combine flour and salt. Cut in shortening until mixture resembles coarse crumbs. Stir in water until mixture forms a ball. Divide dough in half, and shape into balls. Wrap in plastic, and refrigerate for 4 hours or overnight.
- Roll out dough on a floured counter. Don't over work it. Use as directed in pie recipe.

FABULOUS FIBER PIE CRUST
My son is diabetic. This crust is sugar free easy and delicious substitute for graham cracker crusts. It's also a good way to get fiber in your diet which is a must with diabetes. It even smells good when baking!

- 1. preheat oven to 375 degrees. Spray 9 or ten inch pie tin with pam
- 2. Into blender or food processor add dry cereal and Splenda. Blend approximately 20 seconds until about half is ground up. It's okay if you still see about half twigs. Put into a bowl. Stir in melted butter until combined.
- 3. Press mixture into prepared pie tin and bake 7 minutes. Cool and fill with filling of your choice. Sugar free pudding recipes are great.
FIBER ONE PIE CRUST
This is a great alternative to a graham cracker crust that packs about 25% less calories. I've been using this versatile cereal in a lot of applications, and this is one of my favorites.

Steps:
- Preheat oven to 350°F.
- Crush the Fiber One cereal in a sealed bag or process in a food processor until a crumb consistency.
- Melt butter and combine all ingredients.
- Mix thoroughly.
- Press mixture firmly into a 9" pie dish or springform pan.
- Bake for 8-10 minutes. Do not brown.
- Remove and let cool.
