3/4 cup all-purpose flour
1 tablespoon best-quality cocoa powder, preferably Valrhona
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, plus more for pan
3/4 teaspoon instant espresso powder
5 ounces semisweet chocolate, finely chopped
3/4 cup granulated sugar
1/4 cup light-brown sugar
3 large eggs
1 teaspoon pure vanilla extract
3/4 cup (4 1/2 ounces) semisweet chocolate chips, optional

Steps:

  • Preheat oven to 350 degrees. Butter an 8-by-8-inch square baking pan. Line with parchment paper and butter parchment.
  • In a medium bowl, sift together flour, cocoa powder, and salt; set aside
  • In a large, heavy-bottomed saucepan, combine butter and espresso. Place over low heat and stir until butter has melted. Add chocolate, and stir constantly until mixture is smooth, about 2 minutes. Remove from heat, stir in both sugars until well combined.
  • Add eggs and vanilla and continue stirring until well incorporated and mixture no longer appears grainy. Sift flour mixture over batter, and stir until just combined. Stir in chocolate chips, if using.
  • Pour batter into prepared baking pan; smooth top with the back of a wooden spoon or a spatula. Bake until a toothpick inserted in the center comes out with a few moist crumbs, 28 to 30 minutes. Be sure not to over bake. Let cool completely on a wire rack. Cut into 9 brownies.

1 cup unsalted butter
8 ounces bittersweet chocolate (fine quality, no more than 60% cacao)
2 cups sugar
1 teaspoon vanilla extract
5 large eggs
2/3 cup all-purpose flour
1/3 cup unsweetened dutch cocoa
1/2 teaspoon salt
3/4 cup walnuts, chopped (optional)

Steps:

  • Preheat oven to 350 degrees F with rack in center position.
  • Butter and flour 13" x 9" pan.
  • In 3 qt heavy saucepan, melt butter and chocolate over low heat, stirring until smooth.
  • Remove from heat and allow to come to room temperature.
  • Whisk in sugar and vanilla into chocolate/butter combination.
  • Whisk in eggs, one at a time until thoroughly combined. Set aside.
  • In separate bowl combine Dutch process chocolate powder, flour and salt.
  • Combine flour mixture with chocolate/butter and whisk thoroughly.
  • Add chopped walnuts if using.
  • Spread brownie batter in pan and bake for 25-35 minutes.
  • Cool completely.

1 cup firmly packed brown sugar
3/4 cup butter, softened
1/2 cup sugar
3 eggs
1 teaspoon vanilla
1/4 teaspoon salt
1/2 cup instant espresso coffee powder
1/2 cup flour
3/4 teaspoon baking powder
3/4 cup semisweet chocolate morsel
powdered sugar, for dusting

Steps:

  • Preheat oven to 350F.
  • Lightly butter and flour an 9-inch square baking pan; set aside.
  • Beat brown sugar, butter and sugar in a mixing bowl.
  • Add eggs, vanilla and salt.
  • Beat until well blended.
  • Stir in espresso powder, flour and baking powder, mixing until smooth.
  • Fold in chocolate chips.
  • Pour batter into prepared pan.
  • Bake for 30 mins.
  • or until skewer inserted in the centre comes out clean.
  • Cool completely in pan; cut and serve dusted with powdered sugar.

2/3 cup (3 ounces) Cocoa powder
1 1/2 cups (10 1/2 ounces) granulated sugar
1/2 cup (2 ounces) confectioners' sugar
3/4 teaspoon salt
1 cup (4 1/4 ounces) Unbleached All-Purpose Flour
1 tablespoon espresso powder
1 cup (4 ounces) toasted pecans or walnuts, diced (optional)
1 cup (6 ounces) semisweet chocolate chips (optional)
3 large eggs
1/2 cup (3 1/2 ounces) vegetable oil
2 tablespoons(1 ounce) water or brewed coffee

Steps:

  • In a large mixing bowl, whisk together the cocoa, sugars, salt, flour, espresso powder, nuts, and chips. Add the eggs, oil, and water or coffee, mixing just until smooth. Spoon the mixture into a lightly greased 8 x 8" or 9 x 9" square pan, smoothing the top. Bake the brownies in a preheated 350°F oven for about 35 minutes (for the 9" pan), or 45 minutes (for the 8" pan). To see if the brownies are done, remove the pan from the oven, and stick the tip of a sharp knife into the center of the brownies. Wriggle it around just enough to see what's going on. Is the batter under the crust still shiny, wet, and smooth? Continue to bake the brownies, checking frequently. Is it ultra-moist, but not shiny, and "crumby" looking? Take them out, they're done.

1 cup butter (8 oz)
4 (1 ounce) unsweetened chocolate squares
3/4 cup semisweet chocolate morsel, chopped
4 beaten eggs
2 cups sugar
1 cup plain flour
1 teaspoon vanilla
1 cup chopped pecans (optional) or 1 cup walnuts (optional)

Steps:

  • Combine the butter and both chocolates in a pan, and slowly melt on top of the stove. stirring frequently.
  • Beat the eggs with an electric mixer until light and fluffy, then beat in the sugar and continued beating for about two minutes(for you to have a crusty, crinkly top).
  • Add the warm chocolate mixture to the fluffy egg/sugar mixture add the remaining ingredients in the order given. Mix well.
  • Pour into the greased dish (12×8). Bake for 25 minutes at 350°F uncovered. Then reduce heat to 325°F, cover with aluminum foil, baking 5-10 more minutes (depending on how hot your oven cooks). You want this gooey, but set. Let cool, and enjoy each delicious, RICH bite !
  • NOTE: I halved the recipe baked mine 350ºF 27 minutes (8x8) without foil.
