A very easy and fast microwaveable main dish -- sort of a cross between chili and spaghetti with meat sauce.

1 pound ground beef
1 onion, chopped
1 ½ teaspoons chili powder
1 teaspoon dried basil
¾ teaspoon garlic powder, divided
1 (28 ounce) can crushed tomatoes
1 (6 ounce) can tomato paste
½ (8 ounce) package spaghetti, broken into 2-inch pieces
1 (15.25 ounce) can kidney beans, drained
1 cup shredded Cheddar cheese
1 cup sour cream

Steps:

  • Crumble beef into a large microwave-safe bowl. Cook for 3 minutes on high; drain fat and stir in onion, chili powder, basil, 1/2 teaspoon garlic powder, tomatoes and tomato paste. Fill the paste can with water and add. Cover bowl with plastic wrap and microwave on high for 10 minutes.
  • Stir broken spaghetti into meat mixture; re-cover with plastic wrap and microwave on high for 6 minutes. Stir, re-cover and microwave on high for 3 to 4 minutes, or until spaghetti is tender. Stir in beans, re-cover and let stand 5 minutes.
  • In a separate bowl, combine cheese, sour cream and remaining 1/4 teaspoon garlic powder. Microwave on medium-high for 2 minutes, or until cheese is melted. Serve over spaghetti mixture.

750g baby new potatoes
2 tbsp olive oil
8 plump sausages (choose Dad's favourite)
3 rounded tbsp medium-cut Seville orange marmalade (or whatever type you have)
2 tbsp wholegrain mustard
150ml sweet cider
a few rosemary sprigs

Steps:

  • Preheat your oven to fan 180C/conventional 200C/gas 6. Cut the potatoes into halves or quarters depending on their size and put them into a large roasting tin. Drizzle with the olive oil and roast for 10 minutes.
  • Take the tin out of the oven and snuggle the sausages in between the potatoes so they sit on the bottom of the tin. Now roast for another 15 minutes, turning the sausages over at half time so they brown all over.
  • While you're waiting for the sausages to cook, gently heat the marmalade, mustard and cider in a small pan, stirring all the time until the marmalade has melted. Increase the heat and boil for a few minutes until reduced by about half.
  • Pour the sauce over the sausages and potatoes and toss gently together. Scatter the rosemary sprigs on top, return to the oven and cook for a further 10 minutes until golden brown and sticky with the glaze. Sprinkle with salt and coarsely ground black pepper before serving.

1 (28 ounce) can crushed tomatoes
2 (28 ounce) cans tomato sauce
1 1/2 lbs meatballs (precooked) or 1 1/2 lbs ground beef (cooked & drained)
1/2 cup onion, diced
2 garlic cloves, minced
1 tablespoon italian seasoning
1 teaspoon salt
1/2 teaspoon ground black pepper
1/4 cup grated parmesan cheese
1 tablespoon sugar
1 tablespoon extra virgin olive oil (optional)

Steps:

  • Combine all ingredients in crock pot.
  • Cook on high for 3-5 hours or low for 6-8 hours.
  • Serve over spaghetti or pasta of choice.
