I took a few ideas a created my own rice pudding recipe. My family loves it (me particularly), and it is quick and easy to make.

¾ cup uncooked short-grain white rice
1 ½ cups water
2 cups 2% milk
1 teaspoon maple flavored extract
½ cup white sugar
½ teaspoon ground nutmeg
½ teaspoon ground cinnamon
1 pinch ground cloves
1 tablespoon butter

Steps:

  • Combine the rice and water in a saucepan over medium heat. Bring to a boil, and let simmer over low heat for 20 minutes, or until all of the water has been absorbed.
  • Stir in 1 3/4 cups of the milk, sugar and maple flavoring, bring to a boil, and let simmer over medium heat until thick and creamy, about 15 minutes. Stir in the remaining milk, nutmeg, cinnamon, cloves and butter. Cook stirring over low heat for another 5 minutes. Pour into a casserole dish, or serving bowls, and let stand for 5 minutes before serving. This can be served cold also.

This is a traditional french-Canadian dessert that was made during the depression era. The ingredients are simple and were cheap and it is one of those staple desserts in french-canadian homes. I got this recipe online a while back. I did a search for it when I was craving this dessert I had when I was young. I tried it and it tatsted just as I remembered it. Delicious and sweet as with all french-canadian desserts.

1 1/2 cups flour
1 teaspoon baking powder
1/4 cup butter
1 cup sugar
1 teaspoon vanilla
1 cup milk
3/4 cup maple syrup
1 cup brown sugar
1 cup boiling water
1/4 cup butter

Steps:

  • In a bowl sift flour and baking powder together.
  • In another bowl, cream butter and sugar and add vanilla.
  • then slowly add the milk and flour mixture in alternating 1/4 cup increments until all together and smooth.
  • Spread in a buttered baking dish.
  • For the sauce: In a sauce pan, mix all the sauce ingredients together and bring to a boil.
  • Boil for a few seconds and then pour over the cake batter (do not mix).
  • Bake in a 325 preheated oven for 45 minute.

6 eggs
1/2 lb butter, softened
1 cup sugar
2 cups flour
2 tablespoons baking powder
1 pint milk
1 cup apricot

Steps:

  • Cream the butter and sugar together, then add the eggs, one at a time and blend each in until well mixed. Sift together the flour and the baking powder and add this to the butter-sugar-egg mixture, stirring all the time. Make sure the mixture is uniform. Then add the milk and blend it in well. Finally stir in the apricots. Pour the mixture into a greased pudding mold, put the top on the mold and steam the pudding for two hours. Serve while warm with a sauce of your choice.

1 cup flour
1 teaspoon baking soda
1/2 cup brown sugar
1/4 teaspoon salt
1/2 cup milk
1/2 cup raisins
1/2 cup nuts
2 cups boiling water
1 teaspoon butter
1 cup brown sugar
1 teaspoon vanilla

Steps:

  • Mix ingredients above together and pour into a greased baking dish or pan.
  • Pour boiling water, butter, brown sugar and vanilla over first seven ingredients.
  • Bake at 300 degrees for 30 minutes.
  • Cut into squares and turn upside down.
  • Sauce will be on the bottom.
  • Serve hot and plain, or with whipped cream or vanilla ice cream.
