8 ounces cream cheese, softened
6 ounces lump crabmeat, drained
3 green onions, root ends trimmed, dark green ends trimmed, minced
3 tablespoons heavy whipping cream or 3 tablespoons evaporated milk
3 tablespoons grated parmesan cheese, divided
1 1/2 tablespoons red bell peppers or 1 1/2 tablespoons green bell peppers, diced
2 teaspoons dry white wine
2 teaspoons shrimp soup base (see Notes, below) or 2 teaspoons chicken soup base (see Notes, below)
2 teaspoons diced tomatoes or 2 teaspoons drained salsa
1/2 teaspoon crab boil seasoning (Old Bay)

Steps:

  • Fold together all ingredients, except 1 Tbls. Parmesan.
  • Spread evenly into an oven-proof baking dish.
  • Microwave on 50% power for 4 minutes.
  • Sprinkle top with Parmesan.
  • Transfer dish to the oven and broil until top is slightly browned.
  • Notes: Serve with tri-colored corn tortilla chips. Shrimp base is a thick, paste-like bouillon that can be found in the supermarket next to the bouillon and granules. If you can't find it, use chicken soup base OR 2 teaspoons chicken bouillon granules.

1 cup fresh crabmeat
1 cup mayonnaise
1 cup cheddar cheese, grated
1/2 cup scallions, minced
Freshly ground black pepper

Steps:

  • Mix the crabmeat, mayonnaise and grated cheese in the top of a double boiler. Cook over medium heat until melted through. Stir in scallions and black pepper. Spoon onto toasted baguette or crackers. Serve hot.

1 pound - fresh blue crab meat
12 ounces (1 can) - hearts of palm, slice 1/4 inch thick
1 large - fresh ripe mango, peel and dice mango into 1/2 inch pieces
1 tablespoon - fresh chives, chopped into thin slices
1 tablespoon - fresh mint, lightly chopped
1 red bell pepper, remove seeds and dice
1 fresh jalapeño pepper, small dice
Mojito Dressing:
6 ounces - mayonnaise
1 tablespoon - fresh cilantro
1/2 tablespoon - fresh mint
1 tablespoon - key lime juice
2 ounces - light rum
To taste - salt
To taste - white pepper

Steps:

  • Place crab meat in a large bowl. When working with crab meat, make sure to remove all residual shells. Lightly toss all ingredients until combined. Add the prepared Mojito Dressing and toss again. Chill until ready to serve. Mojito Dressing: Pour the rum into a small sauce pan over medium to high heat and carefully bring to a boil. Reduce heat and simmer until the volume is reduced by half. Then remove from heat and cool completely. In the meantime, lightly chop the cilantro and mint, using only leaves and discarding the stems. Finally, in a medium bowl combine the mayonnaise, key lime juice, cilantro and mint. After, add the cooled rum and mix well. Season to taste with salt & pepper. Enjoy with your favorite crispy tortilla chips!

JOE'S CRAB SHACK BLUE CRAB DIP

The number one appetizer on Joe's menu is called Blue Crab Dip but you don't need blue crab to clone it. You don't even need to use fresh crab. I used some delicious lump crabmeat from Phillip's Seafood that comes in 16-ounce cans (you may find it at Costco, Sam's Club, Walmart, and Vons) and the dip turned out great. You could also use the crabmeat that comes in 6-ounce cans found at practically every supermarket-you'll need two of them. Just be sure to get the kind that includes leg meat, and don't forget to drain off the liquid before you toss it in. Source: Top Secret Restaurant Recipes 2 by Todd Wilbur.

2 cups crabmeat (canned is fine)�
1/4 cup diced green onion
1 tablespoon minced mild red chili pepper
1 tablespoon mild green chili pepper (Anaheim)
1/4 teaspoon salt
1/4 teaspoon white pepper
2 tablespoons shredded Parmesan cheese
Paprika
1 teaspoon minced fresh parsley

Steps:

  • Preheat oven to broil.
  • Combine the cream cheese with crab, green onion, chili peppers, salt and white pepper in a medium bowl. Stir well to combine.
  • Spread mixture into the bottom of an oven-safe dish. Use a wide dish for this so that the dip is only about an inch deep in the bottom.
  • Sprinkle Parmesan cheese over the surface of the dip.
  • Broil for 3 to 4 minutes or until the cheese on top begins to brown.
  • Sprinkle paprika over the dip, followed by fresh minced parsley. Serve with tortilla chips or crackers for dipping.
  • Serves 4 to 6 as an appetizer.
